Hua Ting is a well-established Chinese restaurant in Singapore and needs no introduction. Our last visit there was some time ago. One reason for this is the need to make reservations well in advance, which poses a problem for us as many of our eating choices are decided at the last minute.
We had the Hua Ting deluxe starter platter ($28 per person). It was an interesting trio of appetizers – foie gras with beancurd, pan fried french bean in prawn paste and marinated salmon and black fungus in truffle oil. The taste was unusual (in a good way) and we appreciated the creativity of the East meets West combination. We also tried the braised venison with ginseng ($10 pp), tenderloin with truffles sauce ($10 pp) and seafood flat noodles (mee pok) ($26).
We had high expectations but were a bit disappointed as the dishes turned out to be quite ordinary. For some reason this does not seem like the Hua Ting that we had enjoyed coming to previously. Another thing that has changed is their corkage policy. Previously no corkage was charged on bottles from vintages ten years or older. It seems that this was recently reviewed, although they were kind enough not to charge us on this visit. The best dish of the day was the dessert – chilled jelly in whole young coconut ($12). Yummy.

We loved their fried hokkien prawn noodles. Lime, sambal chili, pork lard by the side. Have not been back for awhile so not sure if still tastes good 🙂
Yes, like you, we have fond memories of past visits, but we felt that something is not quite the same on this visit. Hope you will go try them again soon and let us know if you feel the same way.
