Ramen & Tonkatsu Ma Maison is one of the recently opened restaurants in Capitol Piazza.  Ma Maison’s new concept restaurant located in the basement of Capitol Piazza features specialty Hokkaido Cheese Ramen. Besides the cheese ramen, it also offers a good variety of the more usual ramen as well as Ma Maison signature tonskatsu.

Ramen & Tonkatsu Ma Maison is located in the central atrium of basement 2 of Capitol Piazza. It is not walled in which gives it a casual welcoming feel. The dining area is separated from the common corridor by display counters  and strategically arranged benches and decorative items. The giant red chopsticks serve as sort of a divider as well as an interior design element. It has an open kitchen so you can see the chefs at work.

Their menu comes in the form of laminated sheets of different sizes. As its name makes it clear, the main items on the menu are a variety of ramen and tonkatsu.

We ordered a Tonakatsu Shio Ramen Set ($19.80), a Spicy Ramen ($14.80) and the Monday Special Gyoza ($1.80). Hot and cold tea were on the house. The usual service charge and GST were added to the bill.

The food was served quite promptly. The Tonakatsu Ramen Set consisted of a bowl of shio ramen with light broth and a decent sized piece of pork cutlet with a helping of shredded cabbage. The ramen – with preserved bamboo shoots, leek and bean sprouts – in the light creamy sauce tasted quite good. The breaded lean pork cutlet was very nicely cooked till golden brown and was enjoyable especially when eaten with the house tonkatsu sauce. The cabbage, with the sesame based salad dressing, was refreshing.

The spicy ramen comes in there levels of spiciness – Mild, Hot and On Fire. We opted for Hot – and it was really hot and spicy. We shudder to think what On Fire would be like. Notwithstanding the level of spiciness, the spicy ramen was  actually flavourful and delicious. The ramen was cooked just right and garnished with lots of ingredients.

We also liked the gyozas. The fried dumplings had nice crispy skins and were tasty.

We had a nice meal at Ramen & Tonkatsu Ma Maison. The staff were cheerful and attentive. The ambience was pleasant. Ma Maison has added good quality ramen to their nice range of delicious tonkatsu items. We are likely to  eat at Ramen & Tonkatsu Ma Maison at Capitol Piazza again soon.
