The Rabbit Stash is a rooftop restaurant and bar helmed by award-winning Chef Matthew Mok. The restaurant is stashed at the top of WANGZ, a contemporary boutique hotel in Tiong Bahru. Much has been written about Rabbit Stash Restaurant and “creative cuisine”, “experimental dining”, “beautiful food” and “artistic presentation” are some of the descriptions associated with the restaurant and dining there. We had the Lunch Euphoria at Rabbit Stash Restaurant recently and would hop on the bunny wagon and say Chef Mok’s beautifully presented food was an enjoyable visual feast.
Chef Mok is a master degree holder in building construction management turned private chef turned chef owner of the Rabbit Stash Restaurant. The restaurant moved into Wangz Hotel in Tiong Bahru in late 2014. The rooftop location and full height glass panels offer a panoramic view and let in plenty of natural light in the day. The indoor dining area sits about 30 and the outdoor terrace, with view of lush greenery, can sit another 20. The interior style is modern, casual and elegant, with rabbits all over the place adding a whimsical touch.
Rabbit Stash Restaurant has their signature Lunch Euphoria Menu for lunch ($80) and Ensophi Menu for dinner ($148). They also allow you to mix and match a 3 course meal for $79 or 4 course meal for $98. They will also accommodate other a la carte orders. The menus are seasonal and the items in each menu will change from time to time. Photos of their current menus are below.
One of us ordered the Lunch Euphoria, which has 4 main course items plus starter snacks, amuse bouche, petit four and coffee or tea. The other ordinary patron decided on a 2 course meal selection of Lobster Broth and Confit of Morning Catch ($60).
A refreshing of glass of concoction involving pandan leaves was served and water was offered. A basket of 3 different types of warm delicious bread was also bought to the table with a dollop of butter beautifully placed on a small dark stone slab.
Snacks and amuse bouche were served to the both of us. We could see that much effort was put into the preparation and presentation of the starter snacks. The meat balls, crab croquette and fish mousse on fried wanton skin were beautifully arranged on two separate wooden trays. The herb smoked meat balls were under a glass dome which was lifted before us to give us a whiff of the smoke scent. Each of the items tasted as good as it looked.
The amuse bouche was mushroom consomme with truffle and crunchy brown rice. It was excellent – the flavour was intense and the texture provided by the rice made it even more interesting.
The Lobster broth with scallops was served in a stone bowl. The broth was rich and intense and the scallop was succulent with a nice slightly chewy texture.
The Confit of Morning Catch was a fillet of sea bass artistically presented with asparagus bulb. The fish was drizzled with a buttery tangy sauce.
For the Lunch Euphoria Menu, after the lobster broth came the Cauliflower, kale “weed”, smoked caviar. The “kale weed” was crispy deep-fried kai lan. It was nice but it was so brittle there was no way to eat it without making a mess. Beware of this dish if you have to look cool and suave during a meal.
The next dish was a simply delicious rack of lamb with couscous. The lamb was well prepared, tender, tasty and not gamey.
The fourth main item of the Lunch Euphoria was the Composition of Chocolate. It was another course that was a treat to the eyes and the palate. If you need to impress someone who is a chocolate lover, this dish should seal the deal.
Chef Matthew wants to present diners with a visual and gastronomic feast based on his Ensophi philosophy, which you can read about on Rabbit Stash Restaurant’s website. We are ordinary patrons and may not really appreciate the philosophical and intellectual aspects of cooking but we know the food at Rabbit Stash Restaurant is the result of careful thought and earnest preparation. We had a delightful lunch at an elegant but unpretentious restaurant with friendly staff giving good service. Ordinary patrons may not be able to afford to eat there on a regular basis but Rabbit Stash Restaurant will be definitely a good venue for the first date or a special occasion.
