Restaurant André at Bukit Pasoh is now among world’s best restaurants having earned 14th place at the World’s 50 Best Restaurants award ceremony in 2017. It is the only restaurant from Singapore on the World’s top 50 list published by the William Reed Media Group. The 2 Michelin Star French restaurant is No.2 on the Asia’s 50 Best Restaurants list for 2017 and is named as S. Pellegrino’s Best Restaurant in Singapore for many years. Dining at Restaurant André is an experience not to be missed in Singapore – if your budget allows it.
The much acclaimed Restaurant André is situated in a three-storey heritage shophouse in Bukit Pasoh Road. There is no conspicuous sign announcing its presence – just a discrete name on the glass panel of the main entrance, which you will miss if the doors are opened. Perhaps that is an indication that walk in customers are not expected. Restaurant André offers only 30 seats everyday and reservations days (many days) in advance would be advisable.
Entering Restaurant André feels like walking into a cosy beautifully furnished home with pared-back colours and understated elegance. Pottery and art pieces created by Chef André Chiang are on display throughout the restaurant. The sophisticated and stylish interior decor hints of the creative and innovative cuisines served in the restaurant. Dinner will mean using plates and bowls designed by Chef André. Even some of the furniture are designed by the man himself.
Restaurant André ‘s Octaphilosophy
Dining at Restaurant André means an 8 course OCTAPHILOSOPHY degustation menu (S$350++) – a gourmet experience based on eight elements of gastronomy: Unique, Texture, Memory, Pure, Terroir, Salt, South and Artisan.
Pre-dinner drinks and mocktails and wine paring are offered.
Pre-Dinner Snacks
Pre-diner snacks were served. Detailed explanation of each item was given by the server. The snacks were all beautiful and interesting.
One of most memorable items was the Vinegar Ball – frozen vinegar encasing liquid vinegar which would explode in the mouth – a delightful treat.
The abalone served on a bed of sea shells was a treat for the eyes and the palate.
The Apple Cigar
Mains of the Octaphilosophy Menu
Each course was presented in a unique and stylish manner and the server will dutifully explain the ingredients and essence of the dish and why Chef André had chosen to serve that dish.
A picture is worth more than a thousand words they say – so we will show you the photos with very few words of our own.
Seaweed & Cucumber
17 types of Vegetables
Oyster Dumplings – excellent, probably the most delicious dish on the menu.
Squid Pasta topped with Rice Crisp
The Signature Memory – Black truffle cream topped with foie gras mousse
Lamb cooked with coffee beans and cinnamon sticks – served personally by the chef’s wife.
Desserts & Petit Four
There was a pre-dessert palate cleanser followed by 2 desserts.
Then there were the petits fours.
Dining at Restaurant André was a delightful affair where we could relish in an array of creative dishes using quality ingredients. Each dish was stylishly presented. The food intrigued and tantalised the palate. The service was excellent. We finished dinner in a great frame of mind.
