The Bird Southern Table & Bar at Marina Bay Sands (MBS) is a new outpost of Restaurateur John Kunkel’s award-winning restaurant group. The original Yardbird Southern Table & Bar in Miami was recognized by the James Beard Foundation as Best New Restaurant and was named among America’s Best New Restaurants by Bon Appetit. The Bird at MBS offers classic Southern dishes using farm-fresh ingredients and has an extensive list of wines, bourbons, whiskeys and special cocktails such as Watermelon Sling. On weekends, The Bird caters to the brunch crowd with sweet and savoury dishes such as 77 Elvis Pancakes, Maple Bacon Donuts and Deviled Eggs.

The Bird Southern Table & Bar at MBS has an inviting and sophisticated space with old world glamour and rustic charm. The interior decor features white brick walls, old wood, an expansive bar and an open kitchen which allows a view of the back-of-house action. The place has the feel of an old barn house albeit a very well spruced and attractive one.
There is a variety of seating options – including high bar stools, regular dining chairs and lounge sofas. There is a semi-private dining area on another wing of the restaurant.
The atmosphere is casual and relaxed. On the weekend we were there, many tables were occupied by families with young children. The place was buzzing and lively.
Brunch Menu of The Bird
The brunch menu of The Bird is fairly limited. Everything is one one page. The drinks list, however, takes up several pages. Here are pictures of the brunch menu and sections of the drinks list.
The must trys at The Bird are said to be Chicken ‘N’ Watermelon ‘N’ Waffles, Shrimp ‘N’ Grits, Fried Green Tomato BLT and Mama’s Crispy Chicken Biscuit. We did not order any of them (but if you are interested, there should be many reviews by other Singapore bloggers that would have covered those items).
Brunch at The Bird Southern Table & Bar
We wanted a light brunch and ordered the Lewellyn’s Fine Fried Chicken ($35) and Skillet Cornbread ($10). Ice water was served while we waited for our food. The wait for the food was surprisingly short. We have stood longer in lines at fast food joints.
The Lewellyn’s Fine Fried Chicken is half of their signature chicken – prepared with a 27 hour brining process and using a secret 100 year old recipe. Four average size pieces of chicken were served on a skillet with honey hot sauce on the side. The chicken had a thin crispy layer. The meat was flavourful and parts of the chicken were tender but the breast meat was a tad dry. The housemade hot sauce was not very hot and did not excite. On the whole the chicken dish was good and enjoyable but there was no “wow” factor and it was difficult for us to understand the superlatives which had been used to describe Lewellyn’s Fine Fried Chicken.
On the other hand, superlatives were in order for the Skillet Cornbread. The cornbread had a slightly crunchy, buttery crust and light fluffy inside. The sharp cheddar cheese and honey butter combined with the tasty cornbread to produce an amazing combination of textures and flavours. It was very delicious.
It is easy to like The Bird Southern Table & Bar at Marina Bay Sands. Although we thought the chicken was not outstanding, the food was generally good. It might be a little pricey but it is a very nice restaurant in a top location. The space is elegant and charming. The service is good and friendly. It has great atmosphere and it is easy to have a good time there.
