Four Seas Fish Grill – New Restaurant in Great World City by Joyden Concepts


Four Seas Fish Grill is one of the new restaurants that have opened recently at Great World City. This shopping mall in River Valley is in the process of major renovations which are being performed in stages. Sections of the mall is still under wraps. Most areas continue business as usual. Some parts of GWC level one have completed their transformation and this is where the Four Seas Fish Grill is located. This is a restaurant targetted at those who like fish and seafood. We had a simple lunch there recently.

Joyden Concepts operates a small group of Chinese restaurants in Singapore, including Joyden Canton HillV2 and Joyden Treasure in Leisure Park Kallang. Compared to the two Joyden restaurants that we have mentioned, Four Seas Fish Grill is a more casual and smaller outfit. Its menu is focused on seafood items including fish cooked in a variety of ways with their signature Asian sauces like the Grated Old Ginger Sauce, Spicy NonyaSauce and MentaikoMayo topping. The restaurant is very simply decorated. Practicality rather than luxury seems to be the design priority.

Here is a picture of a portion of the Four Seas Fish Grill menu and the order forms. As you can see, the concept is straight forward – different types of seafood cooked in different ways and served with different sauces. They are served as a set i.e. with rice, an appetiser, picked cherry tomatoes and a soup. We selected the Steamed Snapper with Old Ginger Sauce ($13.80) and Grilled Squid with Saikyo Miso Glaze ($13.80).

The soup of the day was watercress soup. Like the appetizer and pickled tomatoes, they were ok but did not add to our enjoyment of the meal. In the end it was all down to the seafood to determine our satisfaction with the lunch.

The steamed snapper was a decent sized piece of fish topped with the ginger sauce. The taste of the sauce dominated the taste of the fish. It was a nice healthy meal of steamed fish and rice, but the taste was quite ordinary.

The squid with Saikyo Miso glaze was a more memorable dish. In this case the glaze was not so heavily lathered onto the squid, allowing a squid taste to also be detected. It was also well cooked – not under or cover done. We liked the miso glaze and the dish in general.
