It has been said that Peking duck was served in the Chinese royal palaces as early as the Yuan Dynasty, that was when the Mongolians were ruling China. The common version of Peking duck in Singapore today is roasted duck prepared with air forced between the skin and the meat. Peking Duck is traditionally carved in front of the diners and strips of crispy duck skin topped with scallions, cucumber slices and sauce are served wrapped in thin rice flour crepes.
