Konjiki Hototogisu 金色不如帰 is a Michelin Star ramen restaurant in Tokyo. Founded by Chef Atsushi Yamamoto, it was awarded one star in the 2019 Tokyo Michelin Guide. Japan Foods Holding (JFH) has introduced Chef Yamamoto’s ramen to Singapore with several Konjiki Hototogisu restaurants. JFH has opened a new restaurant in Raffles City bearing the name of the chef – 麺 (Men) House Yamamoto. The exclusive items at 麺 (Men) House Yamamoto are Truffle Shio Ramen and Porcini Shoyu Ramen. A newly launched vegetarian Avocado Ramen is also on the menu.
House Yamamoto Raffles City
There are several Konjiki Hototogisu 金色不如帰 outlets in Singapore – in CHIJMES, Great World City, Paragon, Jewel Changi Airport and 100AM. We have visited Hototogisu Paragon (read Hototogisu Paragon Michelin Star ramen restaurant from Tokyo – crab ramen). The new 麺 (Men) House Yamamoto is located in the basement of Raffles City. It is more spacious than Hototogisu Paragon. It has an airy feel and have tables that are suitable for lone diners as well as for small or big groups.
House Yamamoto Menu
Below are pictures of sections of 麺 (Men) House Yamamoto menu. Besides the specialty Truffle Shio Ramen and Porcini Shoyu Ramen, there are Salmon Ramen, Rice Sets and side dishes.
Porcini Ramen & Karaage Rice Set
We ordered the Porcini Shoyu Ramen ($14.80) and the Ichimai Karaage Rice Set ($13.90). We also asked for the soft boiled egg ($2) for our ramen. The wait for the food was fairly short (about 10 minutes). Water was offered while we waited.
We were a little disappointed when the Porcini Shoyu Ramen was served. The bowl of ramen served (photos below) looked very different from the beautiful bowl of ramen shown in the menu (picture above). The evident difference when you compare the pictures is not just due to our poor photography skills – the actual bowl of ramen really did not have the colour and allure of the very appetizing bowl of ramen in the menu picture.
The question of looks aside, House Yamamoto did not over-promise with regard to the taste of the Porcini Shoyu Ramen. It was a delightful and delicious dish. The light soy sauce broth had lemon garlic butter in one sector, oyster sauce in the second sector and mushrooms in the third. The broth in each of the 3 sectors would taste different from the others due to the different ingredients. The tangy lemon garlic butter intensified the savoriness of the broth. The sautéed mushrooms added a slightly bitter earthy flavour. When the oyster sauce was added to the mix, the flavours all worked in concert to deliver a really interesting and tasty broth. The cha shu was good and the ramen was cooked just right – soft but slightly chewy.
We expected the egg we ordered to come with the ramen but it was served separately. There was no surprise in terms of the texture and taste of the egg.
The Ichimai Karaage Rice Set came with salad and miso soup. The presentation was very average but again the fried chicken would score high marks for taste. The well seasoned deep fried chicken was crunchy and delectable. The citrussy dip provided added to the enjoyment of the chicken.
Chef Yamamoto Delivers
Chef Atsushi Yamamoto delivers again with exciting creations in the new restaurant that bears his name. The ramen and karaage chicken we tried at 麺 (Men) House Yamamoto at Raffles City were very good. We would be happy to eat there again. Their gyozas looked interesting and we would also like to try their avocado ramen.
