To welcome the Year of the Rat, Sofitel Singapore City Centre’s Racines will be showcasing traditional Chinese delights prepared by Executive Chinese Chef Andrew Chong and his culinary brigade; and Racines’ Pièce de Résistance for the festive season, Chef Andrew’s Signature Pen Cai (from $298+) will make its return.
Toss to good fortune with Racines’ Traditional Yu Sheng ($108+) which features a harmonious dance of pickled chayote, cornichons and kohlrabi that coalesces with shredded celeriac, caviar lime and homemade cured trout.
Racines will also be putting forth set menus available for lunch and dinner from 6 Jan 2020 to 8 Feb 2020 served alongside Racines’ Traditional Yu Sheng with homemade cured trout. Serving a minimum of two diners, the 4-course Prosperous Set Lunch ($68++ per person) includes fragrant rice topped with waxed meat.
From 24 to 26 Jan 2020, Racines invites one and all to come together and partake in Reunion Feasts to usher in the Year of the Rat. Wonderland Prosperity Yu Sheng at Royal Plaza on Scotts
Usher in Year of the Rat with Wonderland Prosperity Yu Sheng (奇幻园吉祥鱼生) that is specially designed and crafted by the chefs of award-winning buffet restaurant, Carousel at Royal Plaza on Scotts. The chefs reinterpreted the look of the yu sheng to tell the story of a garden mouse. The garden mouse is aptly named Jin or 金 (which means gold in Mandarin) as 2020 is the Year of Metal element. Chefs have dressed up Jin in gold flakes to welcome the New Year in his very best. Jin presents all his favourites in the yu sheng, which are mostly fresh ingredients found in the garden. These include ground pistachio, pomelo, strawberries, namsui pear, shredded green and white radish, shredded carrot and hydroponic salad. Multigrain and nuts florentine, crispy enoki mushrooms, shimeiji tempura in rock sugar honey glaze, pickled spicy green papaya and semi-dried kiwi are added to create the burst of flavours in every mouthful.
