BBR by Alain Ducasse, Raffles Hotel Singapore – The Good, Bad and the Ugly Dishes

BBR by Alain Ducasse at Raffles Hotel, Singapore was the restaurant where we had lunch recently. The former Bar & Billiard Room (hence BBR) has been transformed from the dark place it once was into a bright modern Mediterranean restaurant. Enough ink has been spilled about the new Singapore restaurant and multi-Michelin Star celebrity chef Alain Ducasse (read, for instance, this interview that reveals a lot about the chef and the Alain Ducasse empire). We will focus on the food and drinks that we tried that day and sort out what we liked and did not like.

We do not need to say much about the BBR by Alain Ducasse restaurant at Raffles Hotel. You can see from these pictures that it is a bright and beautiful restaurant. It is not a fancy restaurant. There is no starched tablecloth and the overall atmosphere is very modern Spanish restaurant-like. The dress code is smart casual with perhaps a bit more formality in the evenings. The staff were friendly and helpful.

Short Wine List

There is a short wine and drinks list that includes a few wine-by-the-glass options. For more wine options there is another, more comprehensive wine menu (the pictures below are just two sample pages). It is possible to BYO, with the payment of a corkage fee. The corkage fee is waived if one purchases a bottle from the restaurant. We opted for this one-for-one arrangement, buying a bottle of Sancerre from the list and bringing a bottle of red wine from home.

The bottle of 2017 Henri Bourgeois Sancerre Les Baronnes ($98) was one of the most affordable in the list but was certainly enjoyable. It was light, refreshing and went well with most of the starters that day. The 2006 Ch Ducru Beaucailliou that we brought along to the restaurant was smooth and sweet but could do with a few more years in the bottle.

The Good

We dined in a sharing plates style and tried a wide variety of dishes at BBR by Alain Ducasse Raffles Hotel. Generally, the food was mostly of a high quality. We enjoyed most of them. These are the “Good” dishes – i.e. dishes we liked and are happy to order them again on a future visit.

Potato and onion omelette

For starters, you can’t go wrong with the the potato and onion omelette ($9, picture above) and the salted cod fritters ($15, picture below). These snacks are perfect to start the meal with.

The next set of starters were more expensive but satisfying nonetheless. The octopus ($32, picture above) and the truffle tiny pizza ($28, picture below) had wonderful complex flavours and adds a touch of luxury to a casual lunch.

As for the mains, we were happy with the lobster ($72, picture above) and the lamb ($55, picture below). Both were served in heavy metal pots that kept the food warm till they were fished out onto the plate. They were cooked in some very good sauces that we did not allow to go to waste by soaking them up with the bread provided.

The “Bad”

When it comes to food, “good” and “bad” is a matter of opinion and taste. Fortunately, there were only two that we did not really like that day. We will probably not order these again. Both of them are starters.

The onion and anchovy tart ($24, picture above) was too salty and “fishy” for our liking. We thought that the pesto and cured Parma ham mini sandwiches ($15) were also too salty and did not appeal to us.

The Ugly

The “ugly” dish of the day was the tuna neck ($84, picture below) cooked with dried tomato and rosemary. It was served in a large portion, meant for 2 persons. The taste of this dish was actually pretty good and it was a lot of fish meat on that plate. Although it was said to be for two persons, I think three can share this dish quite adequately. It was a value for money dish which we may order again for a large group, but not if we were going to impress anyone. It was served in such a messy state, like something we whip up at home.
