Modern Singapore Food at Redpan : Fusion or Confusion

Redpan Restaurant at Marina Square is a “modern-Singaporean bistro”. Modern Singapore food like Crispy Otah Dumplings and Lup Cheong Mac & Cheese are on the menu. Is it a successful fusion of local and western classics or does it lead to confusion?

Redpan Marina Square opened in March 2016 as a collaboration between an architect firm and a restaurant company. It has been years since we last visited and we wanted to see what new modern Singapore food creations are now available in 2020. At our last visit we tried the Tuckshop Fried Chicken Wings, Temasek Chicken Chop and Prawn Hae Bi Hiam Pasta. Here are pictures of some sample pages from the Redpan menu. We selected the char siew nachos ($9), bak chor foie gras pasta ($18.50) and crispy otak burger ($16).

We shared the char siew nachos as a starter. It was served in a large portion. This could be a meal by itself. It has minced pork ragout on a bed of crisp nachos. Some jalapeno salsa, sliced olives and a dollop of cream added highlights to the taste. It was quite a nice dish but where was char siew was the question on our minds. In this case there was more confusion than fusion.

The bak chor foie gras pasta was a better specimen of a fusion dish. We can see the crossover in style. The popular bak chor mee is made with linguine instead of the usual noodles and the usual pieces of pork liver were substituted by a large slice of foie gras. The fusion was successful in concept but the dish itself was let down by the strong “porky” taste of the slices of pork used. The foie gras by comparison was nice and mild in taste.

Crispy otah burger.

Probably the best modern Singapore food at Redpan on this visit was the crispy otah burger. A thick chunk of otah substitutes the usual meat pattie of the burger. The texture and taste was good. But it was hardly spicy. An extra level of spiciness would make it a more authentic otah fusion dish. But I suppose that is the price we pay to get modern Singapore food, to cater to all kinds of taste buds.
