It is almost eight years since the Fleur de Sel restaurant opened at Tras Street, Singapore. We finally had lunch at this Michelin Plate French restaurant in Singapore. It is helmed by Chef Alexandre Lozachmeu who had worked in major restaurants in Singapore and internationally, including three Michelin-starred Alain Ducasse au Plaza Athénée Restaurant in Paris.
According to Wikipedia, “Fleur de sel (“flower of salt” in French …. ) is a salt that forms as a thin, delicate crust on the surface of seawater as it evaporates. … It is now used as a finishing salt to flavor and garnish food.” It is also the name of this charming French restaurant at Tras Street.
The entrance to the Fleur de Sel restaurant looks plain, but the doors open up into an elegantly appointed restaurant interior. The private dining room in particular looks glamourous. It will be a good venue to host a small party.
Fleur de Sel Restaurant Menu
Like many other fine dining restaurants these days, the Fleur de Sel menu only has fixed course menus. The two dinner set menus cost $128++ and $168++. For ordinary patrons without generous expense accounts, the more affordable lunch menus are the way to go. There is a choice of a $58++ executive set lunch and a $68++ Fleur de Sel set lunch. The lower priced one looked perfectly adequate, but we figured that the other one looked more interesting and only cost $10 more. We decided on the latter.
Wine Menu
The wine menu is not as comprehensive as those in the multi-Michelin starred French restaurants in Singapore, but there is more than enough variety for us. The wines by the glass start from $18 and bottles from around $80.
Our pick of the wine for lunch that day was a bottle of 2018 Michel Redde & Fils Pouilly-Fumé La Moynerie ($89). The sauvignon blanc wine from the Loire Valley, France was light and very dry. We thought it went with the many different types of food we had that day. You can read more about the wine maker in this article.
Our Fleur de Sel Set Lunch
The Starters
There were two starters in the set lunch – Le Foie Gras de Canard and La Saint-Jacques. The pan-seared duck liver was served in generous portion sizes. I was glad that the liver flavour was not too strong in this case. The use of sweet mandarin oranges to balance the liver taste was interesting and effective.
The pan-seared Japanese scallop was good but the size was tiny. It was topped with a piece of crispy chicken skin that provided crunch to the dish.
Main Courses
There were two choices for main course: slow cooked and roasted Welsh lamb rack or pan-seared Mediteranean sea bream. The lamb was tender and tasted wonderful. But it must have been a skinny lamb as the meat content was very low. Fortunately the Périgord winter black truffle potatoes provided more sustenance.
The sea bream with gnocchi was not bad but it was more predictable. The lamb was the better choice.
Dessert and Cheese
There were two choices of dessert: rum baba or molten dark chocolate cake. The chocolate cake was an easy decision. But rum baba did not sound interesting so we opted for the cheese selection ($7 surcharge) as the platter looked very interesting. We could choose four types of cheese. We picked the St Nectaire, Sumaintrain, Livarot and Langres.
Here is a picture of our cheees selection and chocolate cake. I cannot remember which cheese is which but they were either soft or semi-soft and tasted great. Service was effective and friendly. We thought that the $68 set lunch at Fleur de Sel Set restaurant was good value for money. Roadside parking may be hard to find at Tras Street. We parked at Tanjong Pagar Centre (Car Park B) which is a few minutes walk away.
