Capital Kitchen by Zouk has launched its latest culinary concept, an authentic Edomae Omakase pop-up. Helmed by distinguished Chef Ryoichi Nakatani, the pop-up presents an immersive gastronomic journey through the time-honoured days of old Tokyo, with a unique twist. The pop-up leverages Capital Kitchen’s unrivalled music programme that includes Sin City featuring Hip-Hop and RnB, Asian Persuasion with local Singapore and neighbouring Asian artists alongside Zouk classics like Reload for your EDM fix and Total Recall bringing a blast from the past. The menu comprises the freshest, high-quality ingredients flown in three times a week from Toyosu Fish Market in Tokyo. Seasonal highlights include Zuke Maguro, a speciality of Chef Nakatani’s, Monk Fish Liver simmered in red wine and Isobe-Yaki with charcoal-grilled scallop, sea urchin and caviar. The menu is rounded off with a selection of fresh, seasonal Japanese fruits. The intimate experience allows up to eight people with two sittings per night (6.00 pm and 8.30 pm) from Wednesday to Saturday. This April, Wan Hao Chinese Restaurant is showcasing a menu of eel-centric dishes (using salt water white eel and fresh water yellow eel), accentuated with aged-old Cantonese recipes and bespoke Cantonese cooking methods. Rich in flavours, well-marbled with fat and especially succulent, the salt water white eel that has twice the amount of fat as compared to yellow eel, is richer in taste and boasts a softer texture. Dishes that are making their debut include Steamed Whole White Eel with Black Garlic Sauce, Fried Garlic & Spring Onion ($12++ per 100gm); Poached White Eel with Premium Chinese Wine in Superior Soup ($58++ per portion); Braised White Eel with Abalone Sauce & Fish Paste Skin ($68++ per portion).

Embark on a culinary voyage to Italy at Dolce Vita as Chef de Cuisine Giorgio Maggioni unveils a line-up of his new creations, made with the finest seasonal ingredients.

New Contemporary Italian Highlights on Zafferano’s Chef’s Menu
Zafferano’s Head Chef Andrea De Paola’s new creations illustrate his personal and culinary memories of the different Italian regions, weaved together with culinary elements of Asia, his home for the past eight years. Modern techniques, as well as charcoal, a rustic style of cooking, are used to express the qualities of premium delicacies across five courses.
Savour highlights such as the starter of scampi e fegato d’oca – charcoal grilled langoustine perched on a bed of cubed aged foie gras. Chef continues to pay homage to his roots in the north and south of Italy with the goose liver and seafood respectively, while exploring Asian touches such as kombu and ginger dashi that binds the dish. The flavours of the sea are brought together in an elegant union of house-made tagliolini pasta with hiika squid and Kaluga caviar, paired with luscious seafood velouté prepared with Venus clams, langoustine, and lobster.

Tablecape’s beautiful new menu unifies the best of old world charms with modern sensibilities. The first taste will reveal exciting yet thoughtful updates, many of which show how new techniques, ingredients and inspirations bring a revitalised sense of place and another level of luxury to Tablescape’s cuisine.
A good example is the Botanic Garden, a starter as lovely in appearance and flavours as its UNESCO World Heritage Site inspiration. The plant-focused dish is delicate and glamorous, showcasing a spectrum of colours and shapes that promise an equally stunning array of flavours and textures – and delivers.
Classic European flavours, while present, have evolved. The Zucchini starter showcases the flavour of the produce in a soup. A nod to Asian proclivities for drinking nourishing broths, the medium allows a spotlight to shine on heretofore unknown nuances of the produce, which is often relegated in Singapore to being part of a “grilled vegetables” medley.
