A colonial tradition that is ingrained within Singapore’s culture, the new afternoon tea menu at Grand Hyatt Singapore marries the art of culinary finesse with a strong foundation of sustainability.

Begin the four-course menu with a Sustainable Fruit de Mer served on a luxurious two-tiered stand with crumpets and Yarra Valley, Australia, caviar, and a platter of freshly shucked Pacific oysters plus sustainable black tiger prawns served with cocktail sauce. Paired with the first course is the Croque Monsieur. To follow is the New England Clam Chowder topped with crackers. The third course features a hand-rolled Poached Sustainable Barramundi. Completing the third course is a side plate of colourful shredded Organic Heirloom Vegetable Salad seasoned with balsamic vinaigrette. The last course is a ceremonious affair − the Tart of the Day − that stands centre stage on an elevated tier. Taking inspiration from the waterfall feature and lush landscape outside, dessert is served alongside ice cream dressed as flower pots and garnished with seasonal fruits, edible flowers and mint leaves from the hotel’s rooftop garden.

To mark its 38th anniversary this year, Goodwood Park Hotel is showcasing selected favourites from past editions that have been dearly missed by durian fans.  Rolling back into 2021 Durian Fiesta this May is the Mao Shan Wang Durian Swiss Roll!  

The Durian Swiss Roll, previously launched in 1998 using D24 Durian pulp returns with the finest Mao Shan Wang durian filling. Mao Shan Wang durian pulp mixed with fresh cream is spread generously on the vanilla sponge cake before carefully rolled up and lightly dusted with icing sugar to finish. A perfect afternoon tea indulgent!  Available for takeaway only at The Deli from now till 31 May 2021 at $128 nett per roll (1kg).
