New Restaurant Guriru – inspired by the Hamayaki cuisine
Conceived by Chef Teppei Yamashita, in collaboration with Anagram Food Lab, Guriru is a new restaurant for August 2022 dining by the pool.
The menu is inspired by the Japanese Hamayaki, or fisherman’s grill, that fuses the delicious taste of seafood with the technique of grilling over charcoal. Guriru will tantalize taste buds with its fresh seafood, including fresh Hyogo oysters – that can be ordered sashimi style or grilled – black tiger prawns, whole squid, unagi, cod fish and more. Meat lovers will not miss out with a selection of dishes like Meltique Beef and Kurobuta Pork.
Nestled in an intimate and cosy setting, the new restaurant has a relaxed and comfortable atmosphere with a pool view, making it the perfect spot to unwind after a long day with friends and loved ones. Singapore will see the arrival of the world’s most eminent culinary super couple, and the masterminds behind the newly minted No.2 Best Restaurant in the World and the Best Restaurant in South America, Central.
From 5 August until 30 October 2022, world-renowned Peruvian chef and restaurateur Virgilio Martínez and 2021 World’s Best Female Chef Pía León will headline ‘Meters Above Sea Level’, a unique culinary residency presented by Mandala Masters and Mandala Club. Limited seats are available.
In the 2022 World’s 50 Best Restaurants list, Central in Lima climbed two spots from its No.4 position last year to take the prestigious No.2 spot in the list, and was also named The Best Restaurant in South America. A Garden of Summer Flavours at Restaurant JAG
For Chef Jeremy Gillon, summer harks back to memories of relaxing holidays basking by the beach, a magical time of the year filled with conviviality and comfort. This summery affection is expressed in Restaurant JAG’s Summer découverte menu – La Balade du Végétal – featuring plump harvest from France, Italy, Australia, and Asia. The repertoire includes beetroot, corn (white and yellow), cannellini, cucumber, Romanesco, zucchini, tomato, bell pepper, potato, eggplant, haricot verts, cabbage, cherry, peach, and strawberry.
The vegetables and fruits are showcased in an eight-course discovery menu, including three canapés, freshly baked bread, amuse bouche, vegetable-herb tea, palate refresher, cheese trolley, pre-dessert, and seasonal mignardise offerings.
Each type of produce is intimately explored and presented in multiple textures and iterations. The flavours are impeccably balanced and accentuated through the pairing of wild foraged herbs from the Alps of Savoie; completed with protein of the day sourced from hand-picked producers. The dishes are personalised around each diner’s dietary preference and inclination; embraced within the warm hospitality of the front of house team led by Anant.

At Oumi, a farm-to-table kappo dining destination, the contemporary Japanese cuisine lies in the fundamental understanding of provenance, seasonality, and freshness.
In this latest collaboration with 6 hands on deck, Head of Japanese Culinary Development of Oumi, Chef Lamley Chua, works closely with Guest Chef Michael Ryan of 2-hat awarded Provenance in Beechworth, Victoria, Australia ; Resident Chef John-Paul Fiechtner of Kaarla; as well as Christopher Leow, 1-Arden’s Head Farmer from Edible Garden City for one of the dinners.
Presented for lunch and dinner on 17 & 18 August 2022, the ‘Oumi Origins’ 6-hands Collaboration sees respected and award-winning Australian Guest Chef Michael Ryan bring to the table his culinary expertise, knowledge, and innovative ideas as reflected in his contemporary Australian approach to Japanese cuisine. The flavours of Japanese cuisine are inspired from his more than 30 visits to the country and the culinary tours he conducted in Tokyo that amalgamated into the ‘Only in Tokyo’ chef’s guidebook. His love for the best Australian regional produce together with a deep understanding of Japanese cuisine and culture pave the way for an exceptional Australian-Japanese farm-to-table experience featuring ‘nose-to-tail’ dishes of the season.
The produce-forward, omakase-style 4-course lunch ($138++ per person) and 6-course dinner ($268++ per person) menus highlight a list of ingredients collectively selected by the four talents – from the 1-Arden Food Forest to the local markets in Singapore, as well as Australia and Japan. The collaboration will take diners back to the origin in an exploration of where these ingredients are responsibly sourced from, their unique flavours, as well as the stories and history of each.
In the evening of 18 August, Head Farmer Christopher Leow will personally take guests on an educational tour before dinner of the lush 1-Arden Food Forest and its five themed gardens.

This National Day, Restaurant Gaig presents a ‘Catalan Satay’, inspired by Executive Chef Marti Carlos Martinez and his team’s favourite local Singaporean hawker food, satay. They pay tribute to the nation’s food-loving culture by incorporating Catalan flavours into this well-loved skewer. A whole French quail is deboned and marinated overnight with salt, pepper, herbs de Provence, and camomile. The meat is then skewered and grilled over binchotan. The quail satay is paired with an almond and hazelnut based Romesco sauce dip, a traditional condiment that hails from Catalonia.
Available for lunch and dinner exclusively from 8 to 14 August 2022, Quail Satay is served a la carte at the restaurant for $16++.
