Michelin-one star Art restaurant has just been relaunched as chef-owned venue Art di Daniele Sperindio. Perched on top of a majestic neoclassical monument that houses National Gallery Singapore, Art di Daniele Sperindio offers destination dining at its finest.

The degustation menu at Art di Daniele Sperindio is presented as a seven-course tasting menu at $328 per person for dinner, while the lunch degustation menu has three, four and five-courses available at $158, $188 and $208 respectively.

The new menu offers a variety of dishes inspired by this year’s Zodiac Rabbit. Several dishes feature the nostalgic and iconic White Rabbit, including the crispy Fried Shrimp with a mildly spicy White Rabbit candy cream sauce and the crispy sweet Red Bean Pancake topped with White Rabbit Ice Cream. Executive Chinese Chef Chan Hon Cheong of Cantonese restaurant, One Harbour Road, which was awarded The Plate Michelin in Grand Hyatt Hong Kong, will be making a debut on Singapore shores. Modern upscale Cantonese restaurant 5 ON 25 at Andaz Singapore will play host to his refined showcase of Cantonese fare, available for lunch and dinner. Chef Chan will also be joined by the talented Dim Sum Chef Lam Chun Shan of One Harbour Road.

Chef Louis Han stages a Front Yard Barbecue, built on the fondest of memories from his barbecue gatherings back home in Korea. From 1 March 2023 till the end of Summer 2023, Episode 5 at NAE:UM presents a Classic and Signature tasting menu at $198++ for six courses and $258++ for eight courses respectively.

Both menus feature three cold dishes and three hot dishes, with placements to counter the glossy richness of barbecue food. The Signature menu includes the additional episodic re-inventions of Chef Louis’s signature ‘duckgalbi’ snack, ‘somyeon’ noodles dish, and ‘kkul hotteok’ dessert. The result is a creative plating of contemporary Seoul cuisine that lends a breath of fresh air to familiar Korean flavours.

A transportive experience that evokes the essence of the seasons in Japan at Hamamoto

Hamamoto - Dining Ideas for March 2023

As the snow thaws, a new season yields impeccable produce brimming with succulence. At one-Michelin-starred Hamamoto, corpulent fish from the deepest waters make their way into the menu, along with other delicacies hand-picked by Chef Kazuhiro Hamamoto.

The silky flesh of Amadai (tilefish) enriches a shabu shabu, while the likes of Komochi Yarrika (spear squid pregnant with roe) lend delicate flavour to a gorgeous tray of starters. This season’s gutsu-gutsu — a clay pot of steaming broth named for the sound liquid makes when it boils — features Hotaruika (firefly squid) from Toyama along with tender Takenoko (bamboo shoots) and Kinome, a minty herb, from Kyoto. Matsubagani (male snow crabs) from Hokkaido star in Hamamoto’s best-known signature: shabu-shabu. Another irresistible signature is the Ise Ebi Sashimi, pristine raw lobster tail meat set on its shell and crowned with uni and Kaluga caviar.

Town Restaurant presents the ‘Seafood Symphony’, a newly curated buffet dinner served on Wednesdays and Thursdays.

The vibrant gourmet experience will showcase lively presentations by chefs at live cooking stations, an outdoor charcoal grill, and new signature creations such as Sea Urchin in Shell with Nomad Caviar. Diners can also customise dishes to their own preferences at a do-it-yourself seafood taco counter, as well as a create-your-own noodle bowl station that offers a brimming selection of ingredients, including Boston lobster, Alaskan crab and Hokkaido scallop, paired with a choice of laksa gravy, prawn broth or clear fishball broth.

The seafood theme reaches a sweet finale with the debut of two unexpected creations in the dessert repertoire — liquid nitrogen ice cream topped with fish floss, caramel and salted walnut, as well as chocolate salted egg yolk lava with chocolate sorbet, topped with crispy fish skin. Assembled à la minute, both indulgences combine sweet, savoury, creamy and crunchy for a uniquely delightful outcome.

Binary enters a new chapter with a refreshed menu of Sides, Small Plates, Platters, Mains, and Sweets that is waiting to be discovered. Drawing inspiration from the cosmic pas de deux of stars, the gastro-bar remains true to its unique binary approach of featuring distinct flavours of Asian and Western cuisine.

In every dish, the restaurant continues to present both Asian and Western versions of a single produce, while keeping the two cooking traditions distinct.
