Nobu Singapore : Posh Japanese Restaurant at Four Seasons Hotel

Nobu Singapore is one of the more than 50 Nobu restaurant locations around the world.  Known for its mix of traditional Japanese cooking and fusion, it is a stylish new restaurant at Four Seasons Hotel to enjoy Japanese cuisine with a contemporary touch.

Located on level 3 of the Four Seasons Hotel, Nobu Singapore is a brand new Japanese restaurant. Visitors enter through a small bar/reception area (picture below) before accessing the restaurant proper via a short path through the rooftop Japanese garden.

Bright, Contemporary Decor

The long wooden sushi counter makes it clear that this is a Japanese restaurant. Apart from that, the rest of the restaurant has a modern contemporary look. With light wood furniture and attractive lighting and a bold ceiling design, this could be a Mediterranean restaurant or posh coffee house.

The Best Seats at Nobu Singapore

There is a range of seating options at Nobu Singapore. The sushi counter seats are of course the best if sushi is going to be the main dining objective. There are also private rooms for dining. The rest of the seats in the dining hall are round tables for group dining, booth seats by the window for small groups and small bench seats for 1 or 2 people. These last tables look rather small.

Dessert, Wine and Sake Menus

Here are pictures of the Nobu Singapore dessert menu and sample portions from the wine and sake lists. The sake selections are available in various sizes ranging from glass, mass, small, large and bottle. This is useful to allow sampling of different sakes and also for folks who don’t drink so much.

Sake and Snacks

We started lunch with some Nobu tuna tacos ($9 per piece). They were chopped up pieces of raw tuna encased in a taco shell. The taste was ok but did not wow us (as we had thought might happen). For sake we chose the “Junmai” ($58 for a large – which is around 300+ ml). The sake was very good. The description on the menu – “medium bodied with rich notes and a creamy finish” is quite accurate. Serving the sake in a chilled metal ‘kettle’ is a smart way to preserve the coolness of the liquid for some time.

Signature Bento Box

We decided to try the Nobu Signature Bento Box ($85) after watching our fellow diners enjoying theirs on the nearby table. The bento box has many things listed that looked enticing – Sashimi Salad, Sushi & Maki, Shrimp Tempura with Butter Ponzu, Black Cod Miso, Spicy Garlic Vegetables with Rice and Miso Soup.

The best items in the bento box were the black cod miso (a Nobu signature dish which lived up to its reputation) and the shrimp tempura (the small pieces in the top left corner). We also like the spicy vegetables which were hardly spicy and the salad with some slices of seared raw fish. The sushi was however quite average.

Our Nobu Executive Lunch started off predictably with some miso soup and salad. It became more interesting after that.

The next dish of mixed tempura was very good. We enjoyed the two prawns and a few pieces of vegetables.

Different options for the main course of the executive lunch were available. The price of the lunch depends on the choice of the main course. We picked the F1 Japanese Beef Toban Yaki ($80). The slices of beef were dramatically presented in a sizzling stone pot.

The aroma, taste and texture of the beef were outstanding. We thought that the $80 was a much better choice than the $65 bento lunch.

Nobu Singapore Dessert

Dessert is not included in either the bento or the executive lunch. A few choices were available in the dessert menu. We picked the Melon Shiso Kakigori ($23). It was a beautifully presented melon-flavoured shaved ice with coconut cream. Some pieces of fresh melon, Earl Grey jelly, coconut sorbet, shiso syrup and some plain tasting mochi balls completed the dish. A nice cool dish to round up our lunch at Nobu Singapore on a hot tropical afternoon.
