Michelin Star Peking Duck at Ritz Carlton Singapore was the highlight of our lunch recently. Its Chinese restaurant Summer Pavilion has one Michelin Star in the Singapore Michelin Guide 2023 (and many years preceding that).
Michelin Star Chinese Restaurant
This is a restaurant we have visited before and you can see more pictures of the restaurant as well as other types of Cantonese food served in a previous post. There are only a few Michelin Star Chinese restaurants in Singapore and Summer Pavilion is one of them. Having recently tried the Mott 32 Peking duck we thought we should try the one here for comparison while the memory is still fresh in our minds.
Michelin Star Peking Duck
Here is a picture of the barbecued specialties section of the Summer Pavilion menu. A whole duck costs $90, which is significantly cheaper than the Mott 32 duck.
The duck was roasted in classic Peking duck style with the skin fairly dark and crisp. Mott 32’s style was a lighter roast and less crisp skin.
The Michelin star Peking duck was presented to us before it was sent off to be dissected at a service table nearby. Many restaurants, including Mott 32, will have the duck carved up at the table. We were asked for our preference as to how much of the meat would be served and whether we would like to use some of it for a second course. Our decision was to use half of the meat to be used for a second preparation of fried rice.
Peking Duck Presentation
We were pleasantly surprised when the initial ‘sandwiches’ of roast duck skin were presented. They were neatly wrapped in the pancakes. Some sweet sauce was already applied but the leek and cucumber slivers were not. These can be added at the diner’s discretion. The first serving of the duck was small individual portions so that we could start eating without waiting too long.
While we munched the first round of duck, the rest of the ‘sandwiches’ appeared. Very neatly and precisely folded. Those who like to fold their own Peking duck may prefer the DIY style of some restaurants such as Mott 32. We were quite happy with these as it relieves us of messy hands and plates. This style is particularly useful for those dining with guests.
A portion of duck meat that had been de-skinned was served at the same time. Moist and soft, the meat was nice to be eaten on its own. But it can also be inserted into the skin sandwiches. We like to have it both ways. It was enjoyable to enjoy the duck in different ways.
Michelin Star Fried Rice
Our excess duck could have been prepared in different ways. Some restaurants referred to this as the second course or second preparation. An extra fee is usually required. At Summer Pavilion, we asked for it to be prepared in the form of fried rice. We have tried stir fried items before and they have consistently been very well done, with lots of wok hei. This occasion was no exception. Our fried rice with duck was dry and fragrant. The extra cost was $24.
Peking Duck and Red Wine
Our wine to go with the Singapore Michelin star Peking duck was a red Bordeaux – 2014 Chateau Canon. Made merlot and cabernet franc grapes, it has a soft fruity texture. It was as wonderful as the duck. Better descriptions of the wine can be found here.
