Fire holds a special place in Korean culture, symbolising the passing on of tradition, energy and warmth – all of which come together at GU:UM, the new restaurant by the NAE:UM Group. Meaning “to grill” or “to cook over fire” in Korean, GU:UM is the name of the new contemporary grill offering Korean flavours with a cosmopolitan twist.
New Restaurant GU:UM
Nestled within a charming Keong Saik Road shophouse, GU:UM is a chic yet casual space that exudes warmth and hospitality. It encourages diners to connect over a meal in a place anchored by a charcoal grill, just as traditional Korean households would around a hearth.
The new eatery follows the success of NAE:UM, the group’s contemporary Seoul cuisine concept. Just like Chef Louis Han’s international experience and Korean heritage inspire NAE:UM’s menu, GU:UM’s cuisine celebrates a fusion of tradition and innovation. The new restaurant invites diners to experience the joy of communal barbecues.
At GU:UM, the magic happens in an open kitchen. Dishes are prepared and cooked over a modern charcoal grill before being delivered straight to your table. But the focus isn’t just on fire – a variety of cooking techniques, including Western methods, are used to create a symphony of flavours.
The Main Event
Their a la carte menu is designed for groups, featuring delectable starters, vegetable dishes, and sides, with delicious plant-based and gluten-free options catering to all dietary needs.
Meats grilled to a smokey, succulent perfection over the fire will be the main events. Diners can select from prime cuts such as the Tajima Wagyu Ribeye MBS 8 ($188++ per 280g), USDA Prime New York Striploin ($138++ per 280g), and Iberico Pluma ($108++ per 300g) — all of which comes with 4 marination choices: galbi, chilli gochujang, or fermented fish sauce or simply salted.
These hearty sharing plates are served with a side salad as well as banchan, assorted housemade pickles and kimchi, to be enjoyed with the meat as ssam Korean wraps.
Diners can also look forward to other grilled meat dishes such as the NZ Butterflied Quail ($48++ per slab) and Sakura Pork Tomahawk ($98++ per slab), as well as seafood such as the Seabass ($54++) that comes with recommended marination choices.
Items on the a la carte menu include plant-centric Korean Fried Cauliflower ($28++) and Umami Roots ($22++). There are Sot Bibimbap ($36++) and Cinderella Noodles ($24++) and desserts like Yuzu Makgeolli ($16++). GU:UM also offers a beverage programme of Korean and international liquor that includes exclusively launched bottles from boutique Korean distilleries.
