FLUTES has moved to a new location, marking a new chapter in its 20-year history. The restaurant is now housed within the historic Midtown House, the former Beach Road Police Station.
After a 6-month hiatus, FLUTES Restaurant reopens in Midtown House heralding a new chapter in FLUTES’ continuous journey in blending heritage with modern culinary excellence.

The Midtown House was originally built in the 1930s as a police station. The colonial-style building was awarded conservation status in 2002 and a year later was marked as a historic site by the National Heritage Board. It is now part of the Guoco Midtown redevelopment.
The new FLUTES is designed to accommodate all occasions, from intimate meals to grand events. The interior design by acclaimed local design firm David Grace Designs incorporated elements from the building’s rich history to create an elegant ambience steeped in heritage. A feature art piece by Singapore-based art curator Michele Righetti graces the space, which adds a layer of visual delight and cultural depth, perfectly complementing the venue’s architectural beauty.
Contemporary European Menu
The menu continues to offer contemporary European dishes with subtle Singaporean influences, but with a renewed focus on sustainability. They use responsibly sourced seafood and ethically procured meats, alongside composting initiatives and plans for future greenhouse projects.
Led by Executive Chef Peter Rollinson, the menu changes seasonally to showcase the freshest ingredients. Diners can expect signature dishes featuring unique Australian native ingredients, alongside innovative creations that incorporate local elements.
An expanded wine list includes a selection of sustainable and biodynamic options, complementing the existing range of over 300 wines chosen to pair perfectly with the menu.
The restaurant also supports the local community through collaborations with artisans and businesses, such as sourcing tableware from Mudrock Ceramics.
