Summer Palace, known for its fine Cantonese cuisine since 1982, has reopened its doors at the Conrad Singapore Orchard with a bold new look. The restaurant has been transformed into a space for modern, multi-sensory dining experiences, all while staying true to the old traditions of Chinese food and drink culture.
Refined Dining Experience
Located on Level 3 of the Conrad Singapore Orchard, Summer Palace exudes serenity and quiet elegance, embodying imperial grandeur and refined traditions inspired by its namesake in Beijing. Designed by the award-winning Matthew Shang Design Office (MSDO), the gracefully renewed Summer Palace seamlessly blends imperial elegance with modernity. The restaurant features a serene terrace and a gallery of Chinese art. The main dining room, adorned with traditional scenes of the original Summer Palace depicted on hand-painted wallpaper, offers a refined atmosphere complemented by private dining rooms for intimate gatherings.
Menu Celebrates Heritage with Artistry
Executive Chef Liu Ching Hai, with a heritage rooted in Hong Kong, leads Summer Palace’s renewed culinary journey. With over three decades of experience, Chef Liu’s mastery of fine Cantonese cuisine revolves around the timeless trifecta of 色香味 (colour, aroma, and taste). Under his guidance, the culinary team elevates and redefines classic dishes, showcasing deep knowledge, technical expertise and passion.
The menu, changing with the seasons, ensures peak freshness of ingredients. From handcrafted dim sum to Peking duck and other roast meats cooked using traditional open-flame techniques, each dish highlights millennia-old Cantonese culinary traditions.
The new menu at Summer Palace includes a la carte dishes and tasting sets.
