Immerse in the beautiful season of spring at Esora

The Spring 2023 Tasting Menu is Chef Araki’s ode to the season of ‘fresh starts’.

‘Sansai’ (山菜), or literally mountain vegetables, are harbingers of spring and particularly prized in Japan. Chef Araki serves ‘sansai’ across the menu, bringing out the best in their flavours. Their unique bitterness and aroma will bring to mind the Japanese saying, ‘春の皿には苦味を盛れ’, literally ‘Serve bitterness on a spring plate’. In these unassuming plants which herald the new year with their cleansing values and earthy flavours, the Japanese see everything that endears them to the season of spring.

Immerse in the beautiful spring season at Esora. Enjoy the 10-course tasting menu where the dishes of the Spring Menu express the values of Chef Araki. They delight the five senses and give voice to the special character of the season, its bitter-sweet drama of birth and ephemerality.
