Shinichi Nakatake Debuts as Keyaki’s Executive Chef with Winter Kaiseki Menus

Taking the helm at Keyaki Japanese Restaurant is Shinichi Nakatake (中竹真一), 40-year-old Japanese native from Yokohama. As Executive Chef of Keyaki, Pan Pacific Singapore’s signature Japanese restaurant, Chef Nakatake brings with him his passion for cooking and exquisite craftsmanship to the long-established restaurant.

November 2017 news - Keyaki’s Winter Kaiseki Menus

From 13 November to 25 December 2017, Chef Nakatake will debut two specially-designed multi-course Kaiseki menus, featuring premium ingredients from Kyoto, a place close to his heart, with exquisite seasonal Winter delicacies. Specially air-flown ingredients from Kyoto will include Kabu (Kyoto Turnip), Ebi-Imo (Taro) and Kyo yasai, traditional vegetables that are unique to Kyoto and highly valued for their taste.  Winter culinary highlights include the Buri (Yellowtail) and Kinmedai (Red Bream), best enjoyed Sashimi-style, Amadai (Tilefish) that is grilled and topped with Sea Urchin Sauce and Snow Crab and King Crab.

McDonalds’ new Ninja Chicken Burger ($6.40) has crispy chicken thigh glazed with sweet Nanban sauce, shredded white cabbage and Japanese tartar sauce. As it is the ninja burger the bun has to be black – so there is a charcoal sesame bun. It is quite tasty. We wonder if there will be a Ninja Turtle Burger.

A Star is Rising at Award Winning Les Amis

Koh Han Jie, Les Amis’ Chef de Partie, is the winner of this year’s Young Talents Escoffier 2017 Asia Final, a prestigious culinary competition for young chefs under 25 years old. Having earlier won the Singapore segment, 24-year old Han Jie clinched the top win at the Asian Finals, and with it, the right to represent Asia in the Young Talents Escoffier Finals in Zurich in March 2018. Han Jie has been training under the watchful eyes of Les Amis’ Executive Chef Sebastien Lepinoy and coached by Les Amis’ Executive Sous-Chef, Chef Peter Teo in two-Michelin-starred French restaurant Les Amis at Shaw Centre.
