A Quintessential Kyoto Cuisine at Keyaki
Be transported back in time to the kitchen of the historical Imperial Court from 13 November to 25 December 2018 with two delicately curated set menus, showcasing the culinary traditions of Kyoto.
The Kyo-kaiseki set menu is a tribute to traditional Kyoto cooking, with an emphasis on the subtle flavours and freshness of the seasonal ingredients or opt for a special vegetarian cuisine highlighting the well-known Kyoto vegetables that are highly-valued as Kyoto’s varied climate of a raw winter and extremely hot summer provides ideal conditions for growing these vegetables.
Available for lunch and dinner at Keyaki, guests may select from the Kyo-yasi or Kyo-kaiseki menu that starts from SGD180.

Flavours of Indonesia at Melt Café in Mandarin Oriental
With newly appointed Chef Kiki Djohardin at the helm of Melt Café in Mandarin Oriental, Singapore, discover authentic Indonesian cuisine from 9 to 18 November. Delight in a creamy Chicken Curry originating from West Sumatra and the well-known Babi Guling. The roast suckling pig is stuffed with rice and basted inside and out with a heady concoction, which enhances the flavour during the slow spit-roasting process. A must-try is Chef Kiki’s Oxtail Soup, made using a secret recipe and has earned its reputation for being one of the best hangover cures during his time at Mandarin Oriental, Las Vegas. Award Winning Honey Roasted Challand Duck by Chef Jason Tang in Amara Singapore from October
At the Food and Hotel Asia 2018 Culinary Challenge, a biennial competition where hundreds of culinary talents from around the world showcase their finest skills, Chef Jason crafted his award-winning dish with the incorporation of his Chinese background with his modern European-style culinary methods by using Chinese parsley to elevate the flavours of the French produce. Honey is brushed onto the duck skin to replicate the light sweetness commonly present in Chinese dishes. On top of it all, the duck is slightly smoked atop dry hay for a refreshing and earthy aroma, leaving guests craving for more. A refined masterpiece is apparent from the intricate cooking methods to the presentation of colours and textures showcased by Chef Jason.
Amara Singapore will be presenting the lauded Honey Roasted Challand Duck on ala carte dinner menu at Element on Tras Street from 15 October 2018. Imported from France, this lean duck is roasted to perfection for a tender, juicy bite. The duck skin is lightly glazed with honey and seasoned with coriander, cumin seeds and exotic spices, making this Challand duck dish the perfect combination of sweet and savoury on a plate.
The dish is priced at SGD 44 and will be made available from 15 October 2018 onwards at Element on Tras Street at Amara Singapore and is subject to Chef Jason’s availability.
