Australian Fine Dining Arrives at The Fullerton Bay Hotel Singapore

The Fullerton Bay Hotel Singapore’s La Brasserie is showcasing modern Australian cuisine through an exclusive degustation menu from 10 to 28 February 2025, bringing Sydney’s culinary excellence to Marina Bay.

The ‘Coast to Table: From Sydney to Singapore’ menu features guest chefs Jack Basoff and Jessica Timpano from The Fullerton Hotel Sydney, who will work alongside La Brasserie’s Chef de Cuisine Mitchell Yeo to present Australian ingredients in a fine dining setting.


Diners can experience unique dishes such as Cured Kangaroo Carpaccio with native Australian fruits, and the Aussie Bay Bug Roll, featuring flathead lobster in a brioche bun. The menu also includes premium offerings like Koji-marinated Wagyu Beef Skirt with a marble score of 9+, served with smoky aubergine and chimichurri sauce.

The experience concludes with a reimagined Australian classic dessert, the Golden Gaytime, featuring honeycomb, milk chocolate, and mascarpone, crafted by Head Pastry Chef Jessica Timpano.

Two menu options are available: a four-course lunch at $98++ per person and a seven-course dinner priced at $158++ per person. Wine pairing options are offered at $42++ for lunch and $78++ for dinner. The dinner degustation will not be available from 13 to 16 February 2025.

For those preferring more flexibility, selected dishes will be available à la carte from 12 February 2025. All dining experiences will be set against the backdrop of Marina Bay’s waterfront views.

Royal Chefs Bring A Taste of Brunei to Singapore’s Carousel

Taste of Brunei at Carousel

Carousel at Royal Plaza on Scotts will host a three-day Bruneian food festival from 21 to 23 February 2025, coinciding with Brunei’s 41st National Day celebrations. Two guest chefs from Royal Brunei Culinary, Chef Nortini and Chef Amirah, will showcase authentic dishes from the Sultanate.

The “Taste of Brunei at Carousel” event features Brunei’s national dish, Ambuyat, a sago-based delicacy served with traditional dipping sauces including Cacah Binjai, Cacah Tempoyak, and Sambal Belacan. Other highlights include Pais Daging, featuring marinated beef steamed in banana leaves, and Hati Buyah Tumis Kicap, a speciality dish of stir-fried beef lung in dark sauce.

Dessert enthusiasts can look forward to exclusive treats from Junjung Majestic Brunei, including their signature Kek Lapis, a traditional multi-layered cake. The menu also features local sweets such as Wajid, made with gula melaka glutinous rice, and Talam Pisang, a steamed banana kueh with coconut layers.

The festival runs during lunch and dinner service throughout the three days. This is one of the special F&B Promotions in Singapore Hotels that gives us a rare opportunity to experience authentic Bruneian cuisine without crossing borders.

Celebrity Chef Brings Indonesian Cuisine to PARKROYAL COLLECTION Marina Bay

PARKROYAL COLLECTION Marina Bay’s Peppermint restaurant is set to launch its first-ever Indonesian buffet featuring celebrity chef Degan Septoadji, former judge of MasterChef Indonesia.

The ‘Wonderful Indonesia’ buffet, running from 26 February to 31 March 2025, marks a collaboration between the halal-certified restaurant and the Embassy of Indonesia in Singapore. Chef Septoadji, who has over three decades of global culinary experience, will work alongside Peppermint’s Chef de Cuisine Leon to showcase authentic Indonesian dishes.

Diners can expect signature dishes including Whole Kambing Guling (roast lamb with Indonesian spices), Lobster Bakar Bumbu Jimbaran (grilled lobster with Jimbaran-style seasoning), and traditional favourites such as Sate Lilit served on lemongrass skewers. The buffet also features vegetarian options like Jukut Nangka Mekuah, a Balinese jackfruit curry.

Cultural Experience & Giveaway

Adding to the cultural experience, traditional Indonesian dancers will perform during dinner service on the first two weekends of the promotion. The restaurant will also feature Indonesian décor to enhance the dining atmosphere.

In conjunction with the launch, Peppermint has partnered with Garuda Indonesia and Pan Pacific Jakarta for a social media giveaway. Winners can receive up to $400 in flight vouchers to Indonesia and a two-night stay at Pan Pacific Jakarta.

Prices range from $72++ per adult for weekday lunch to $112++ for weekend dinner, with children aged 6-12 years receiving 50% off. Children under six dine free.

The buffet timing runs from 12 noon to 2:30 pm for weekday lunch and 6:30 pm to 10:00 pm for dinner daily, with extended lunch hours until 3:00 pm on weekends and public holidays.

The Herbs and Blossoms Afternoon Tea showcases a carefully curated selection of savoury and sweet creations infused with aromatic herbs and floral notes.

The savoury selection features innovative combinations such as tiger prawn with pomelo and gold flakes, and a chrysanthemum-inspired tart combining crab rillette with Granny Smith apple. A distinctive lavender brioche filled with chicken and lemon thyme adds an aromatic touch to the traditional teatime favourite.

Sweet offerings include a jasmine diplomat cream with mango on sablé, and an elderflower creation paired with vanilla chantilly and strawberry. Asian-inspired elements appear in items such as the makrut lime dessert with black sesame and coconut, and a shiso mousse complemented by yuzu confiture.

The experience concludes with freshly baked Madagascar bourbon vanilla and gruyère thyme scones, accompanied by an elderflower lychee granite palate cleanser.

The hotel’s culinary team can accommodate dietary requirements, with modifications available for items containing pork, nuts, or shellfish.

The afternoon tea service is presented in the hotel’s Lobby Lounge, offering guests a refined setting for this botanical-themed experience. Priced at $68++ per person, the experience includes coffee or tea service.

Fullerton Hotels Singapore Introduces Korean Strawberry Afternoon Tea

Strawberry Bliss Afternoon Tea - F&B Promotions in Singapore Hotels Fullerton

The Fullerton Hotel Singapore and The Fullerton Bay Hotel Singapore have launched a new afternoon tea experience featuring premium Korean strawberries from 13 February to 30 March 2025.

The Strawberry Bliss Afternoon Tea, available at The Courtyard and The Landing Point, showcases both sweet and savoury creations crafted by Executive Pastry Chef Siddharth Prabhu.

Guests can expect luxury items such as caviar paired with strawberry and kohlrabi, served alongside king prawns at The Courtyard or Boston lobster at The Landing Point. Other savoury highlights include beetroot Atlantic salmon with strawberry and passion fruit, and duck rillettes with strawberry and rhubarb.

The dessert selection features innovative creations like the Pistachio Strawberry cube made with pure pistachio paste and strawberry crémeux, and classic reimaginings such as the Strawberry Shortcake with vanilla bean. A special Strawberry Pu’er Infusion, combining house-brewed sticky rice Pu’er tea with strawberry purée and ginger ale, complements the experience.

Prices from 17 February 2025 onwards are $58++ per adult at The Courtyard and $68++ per adult at The Landing Point, with children’s prices at half the adult rate.

Both venues offer two daily seating times. The Courtyard serves afternoon tea Monday to Thursday from 2:30 pm to 5:30 pm, with extended hours on weekends. The Landing Point offers the experience daily with seatings from noon to 2:30 pm and 3:30 pm to 6:00 pm.

Man Fu Yuan at InterContinental Singapore is launching a new collection of traditional Cantonese double-boiled soups alongside refreshed executive lunch sets in March 2025.

Executive Chinese Chef Aaron Tan has crafted eight distinctive soups, each priced between $16.80++ and $18.80++ per serving. Highlights include the Double-boiled Duck with Barley and Orange Peel, designed to support digestion and lung health, and the Double-boiled Black Chicken with U.S. Ginseng, enhanced with dried longan and black goji berries for immunity support.

Executive lunch set menus

The restaurant has also updated its executive lunch set menus, Willow and Camellia, featuring modern interpretations of Cantonese classics. Dishes include steamed Greenland turbot fillet with preserved orange peel and honey-glazed Iberico pork char siew with wok-fried rice.

The executive lunch sets are available at promotional rates based on group size. Individual diners and pairs pay $88++ per person, while groups of three to five enjoy a reduced rate of $79.80++ per person. Larger groups of six or more receive further savings at $75.80++ per person.

Each set menu includes five courses, starting with a trio of appetisers and concluding with desserts such as chilled pomelo with peach collagen or traditional almond cream with herbal jelly.

The promotion runs weekdays during lunch service.
