Madison’s is an all-day dining restaurant at Pullman Singapore Hill Street with stylish interiors that pays homage to the iconic New York City deli culture.

Sitting on the ground floor of Pullman Singapore Hill Street, Madison’s Singapore is a stylish interpretation of a Big Apple deli. The interior strikes a balance between elegance and comfort. Plush leather booths line the walls, while sleek marble-topped tables fill the centre space. Dark wood, brass accents and warm lighting create an inviting atmosphere. The décor makes Madison’s Singapore feel a bit special, not just another hotel restaurant.

Even the tableware exudes old-world charm, with stately teapots and cups that wouldn’t look out of place in a Manhattan social club.

Madison’s Menu
Madison’s menu is extensive. It has a selection of American comfort food with a few surprises thrown in. The all-day dining options cover breakfast through dinner, with separate menus for set lunches, weekend brunches, and grab-and-go items.
Pastrami sandwiches, subs made fresh daily, and hearty mains fill the menu. The all-day menu has items such as Smoked Chicken Waldorf, MS3 Grain Fed Beef New York Strip, and various pasta dishes to tempt the palate. It also features local favourites like Laksa and Bak Kut Teh.
Dinner at Madison’s Singapore
During our visit, we ordered two main courses. The Pan Seared Barramundi ($28) and the Chicken Leg Confit ($26).

The Pan Seared Barramundi arrived as a fillet with a spiced tomato based sauce. The fish’s crisp, golden exterior gave way to flaky, moist flesh.Garam masala-braised chickpeas provided a warm, mildly spicy counterpoint, while pickles added a tangy bite. Charred vegetables and a scattering of fresh coriander completed the dish. The portion was modest but satisfying, offering good value for the quality.


The Chicken Leg Confit showcased classic French technique with an American twist. The chicken was very tender, complemented by a rich, creamy mushroom sauce and chicken jus. The hash brown crumble added a pleasant contrast in texture. The mushrooms themselves were also delicious, with a satisfyingly chewy texture. While the portion size might be considered modest for those with a typical “American sized” appetite, it was quite adequate for us.

To accompany our meal, we ordered a latte ($8). It was a competently made coffee, on par with what you would expect from a skilled barista.

Reliable & Pleasant Option
Overall, Madison’s offers a good dining experience. While the dishes we tried weren’t groundbreaking, they were well-prepared and enjoyable. The staff were friendly and helpful, although the restaurant occasionally seemed slightly understaffed, resulting in short waits.
Madison’s versatile atmosphere and diverse menu make it suitable for various occasions, from business lunches and casual meals with friends to date nights. With its inviting ambience and prime location, Madison’s is a reliable and pleasant dining option.
