Merci Marcel, the popular French dining establishment, has opened its fifth location at Robertson Quay, transforming a historic 19th-century warehouse into a waterfront restaurant featuring a menu by acclaimed Chef Bruno Ménard.

Chef Ménard’s collaboration with Merci Marcel creates a menu focused on the essentials that make French cuisine special – exceptional ingredients, time-honoured techniques, and flavours that speak for themselves. The menu celebrates French culinary heritage while embracing fresh perspectives.

The menu starts with refined appetizers. The Cévennes onion soup features produce from southern France, complemented by pan-seared foie gras and truffle Chantilly. Lighter options include beetroot tartar and crab croquettes with a local twist – Singaporean-style chili crab mayonnaise.

Main courses showcase both simplicity and technique. The wild porcini ravioles come bathed in creamy cep sauce. Roasted chicken breast arrives with a distinctive tomato-raspberry sauce. Seafood enthusiasts can enjoy poached snapper with scallop quenelle, a dish that highlights classical French methods.

For those seeking heartier fare, the 600g grilled ribeye steak impresses with its quality beef, enhanced by Cambodian Kampot pepper and served with crispy string potatoes.

Desserts reflect Chef Ménard’s personal touches on classic recipes. The rum baba draws inspiration from his father’s recipe, featuring passionfruit glaze and a generous pour of double-cask Plantation Dark Rum. Other sweet endings include warm chocolate espuma and coconut spoom.

Merci Marcel also offers an extensive selection from various French regions, from prestigious labels to hidden gems. Notable bottles include the bold Saint-Julien 2006 from Château Léoville Barton and the elegant Nuits-Saint-Georges 2021 from Domaine Jean Chauvenet.
