News: Sky-high restaurant introduces 12-hour service from midday to midnight
SKAI at Swissรดtel The Stamford has launched a new dining concept that operates from noon to midnight daily. The 70th-floor restaurant now offers different menus throughout the day to cater to various dining occasions.

The new “12 to 12” concept includes four distinct dining experiences. A power lunch menu runs from Monday to Friday between 12 noon and 2 pm. An ร la carte menu is available from 12 noon to 10 pm. The restaurant also serves high tea from 2.30 pm to 5 pm. A supper club menu operates from 9.30 pm to midnight.
Tuna Bar Features Tokyo Fish

SKAI has added a Tuna Bar as part of the new concept. The bar showcases premium tuna flown in twice weekly from Tokyo’s Toyosu Market. Chef Nakao, formerly of Mikuni, and Executive Chef Seumas Smith oversee the bar operations.
The tuna is dry-aged in a temperature-controlled chamber for six days. This process enhances the fish’s flavour and texture. Diners can order sashimi from $18, nigiri from $22, or tuna crudo for $28. Premium cuts include Chutoro at $32 and Otoro at $42.
The Tuna Bar offers a semi-private dining space at the end of the restaurant. However, tuna dishes are available throughout the entire restaurant.
Express Lunch Options

The power lunch menu caters to busy professionals. A two-course menu costs $48 and takes 45 minutes to serve. A three-course option is priced at $58 and served within an hour. A four-course menu at $65 offers a more leisurely experience.
Lunch dishes include Roasted Beef Salad with horseradish, Kabocha Pumpkin with falafel and sumac, and Halibut with kombu beurre blanc. The menu is designed for solo diners, business meetings, or quick breaks.
Late-Night Dining

The supper club menu starts at 9.30 pm and runs until midnight. This menu focuses on small plates that pair well with cocktails. Options include Ikura Tartlets at $9, Japanese Fried Chicken Karaage at $20, and Salt and Pepper Baby Squid at $30.
Other supper club dishes include Iberico Pork Secreto Yakitori at $10, Grilled Cheese with Truffle at $20, and Wagyu Beef Sliders at $21. The menu is designed for relaxed evening dining with city views.
ร La Carte Menu

The main ร la carte menu reflects Executive Chef Seumas Smith’s contemporary grilling approach. The menu features Japanese ingredients and classical cooking techniques. Small plates include Hamachi Ceviche at $28, Grilled Asparagus at $32, and Seared Foie Gras at $48.
Seafood options include Black Cod at $59 and Barramundi at $50. Premium meat cuts are available, including Black Onyx Tenderloin (200g) at $95, Omi A5 Striploin (200g) at $150, and Saga A5 Tenderloin (150g) at $165.
