The St. Regis Singapore has opened Sophia, a modern Italian restaurant led by Puglia-born Chef de Cuisine Angelo Sergio. The new restaurant aims to blend the tradition of Italian hospitality with a contemporary approach.

Regional Italian cooking

Chef Angelo Sergio focuses on authentic Italian recipes using imported ingredients. The menu includes house-made focaccia, beef bresaola with goat cheese, and stracciatella with smoked red tuna.

Starters include grilled octopus with Tropea onions and fava beans. The Carpaccio di Gamberi features Mazara red prawns with raspberry and lemon gel.
The pasta selection includes Tagliatelle Atavi e Porcini. This dish uses hickory-smoked pasta imported from Italy. It is only available at Sophia.
Another pasta option is Pappardelle al Ragรน. The ragu uses hand-cut Wagyu beef simmered until tender.

Main courses and desserts

Main dishes include a one-kilogram Angus T-bone steak. The Bistecca alla Fiorentina comes with red wine jus and cannellini beans.
The Baccalร in Umido is a cod stew with white onion sauce, potato and artichoke.

Desserts include tiramisu and Baba Napoletano with limoncello syrup. Two dessertsโCannoncini alla Crema and Salame di Cioccolatoโare prepared tableside.
Set lunch and Sunday brunch

Sophia offers two-course lunch sets at $42++ and three-course sets at $58++. These are available Monday to Saturday.
Sunday brunch costs $198++ per person. The price includes bottomless R de Ruinart champagne and house wines.

Brunch features a live band, a mozzarella bar and a gelato cart. Pastas are made to order.
