Singapore Michelin Star Hawker Hill Street Tai Hwa Pork Noodle 大華豬肉粿條面 at Crawford Lane has kept its one Michelin Star status in the Singapore Michelin Guide since 2016. It has been a while since our last visit in 2015, we thought that it is time to revisit this top bak chor mee place in Singapore.

Best Hawker in Singapore?

If the Michelin Guide can be taken as the authority on food standards in the places they cover, then it could be argued that Hill Street Tai Hwa Pork Noodle is the best bak chor mee in Singapore or perhaps even the best hawker food in Singapore given that it is the only Singapore hawker stall with a Michelin Star in the current 2022 Singapore Michelin Guide. Of course that is not the case as taste is subjective, many people may disagree with the Michelin awards.

The Michelin Star award is now proudly displayed on the signboard. A new service area has opened at the left end of the coffeeshop. With two kitchens and counters operational, the waiting time can be cut. We were pleasantly surprised by the short queue at the time of our visit on a weekday just before 11 am. Our wait time was only 15 minutes that day. Hill Street Tai Hwa prices used to start from $5. Now the prices are $6, $8 and $10.

The Singapore Michelin Star hawker has been written about in text and in vlogs on Youtube over the years. It seems that Tai Hwa is on the shortlist of travelling foodies from around the world. We could spot a few tables of foreign visitors. From their comments it looked like they enjoyed their Singapore Michelin star noodles.


Singapore Michelin Star Hawker Bak Chor Mee

We decided to try the dry and soup versions at Hill Street Tai Hwa Pork Noodles, both in the medium size ($8 each).

Consistent with what we experienced in the past, they were quite extravagant with the ingredients. The portion of noodles was fair but there were more than adequate toppings of dried fish crisp, minced pork, pork slices, pork balls and liver slices. The pork, in all its forms, were fresh and of good quality. The crispy fried “ti poh” solefish enhanced the noodles with a dried seafood flavour.

Soup Noodles

Our Tai Hwa kway teow soup was delicious. The kway teow used were the thin type. I think it provided a good amount of surface area to absorb the richly flavoured soup and helped to grip some of minced pork drifting in the soup. The noodles and all its ingredients were nicely balanced and delicious. We preferred this over the dry noodles on that day.

Dry Noodles

Our dry noodles (“mee pok tao”) is probably the version that comes to mind when one mentions bak chor mee. The quantity of ingredients was more than a match for the noodles. We thought that the seasoning was a bit heavy on that day. We do not mind a heavy dose of vinegar but the saltiness seemed to dominate the flavours in this bowl of BCM. Other than that, everything else was as good as how it used to be.

Thankfully the years of Michelin stardom do not seem to have adversely affected the appeal of the Singapore Michelin Star Hawker Bak Chor Mee. The thought of long queues was the reason we had not visited them in a while. It seems that the situation is not too bad during off-peak hours.
