Celebrated Chef André Chiang has unveiled his latest venture in Singapore, Bon Broth, a hotpot dining concept that elevates the humble broth to centre stage.The restaurant, opening its doors on 18 February 2025 at Raffles City, marks a significant departure from traditional hotpot establishments with its focus on individually crafted broths.

Bon Broth – flavour from the first sip

Bon Broth, a collaboration with local F&B group Surrey Hills Holdings, introduces a novel approach to hotpot dining. Each broth is prepared à la minute, following classical French culinary techniques—a method that sets it apart in Singapore’s competitive hotpot scene.
“With Bon Broth, I hope to change the way people see hotpot by shifting their focus to what truly matters – the quality of the broth,” Chef André explains. The chef, known for his refined approach to cuisine, plans to expand the concept to Tokyo, New York, and Los Angeles later this year.
At the heart of Bon Broth’s offering is a meticulously developed broth-making process. Each serving begins with a aromatic mirepoix base, which is sautéed before being combined with Chef André’s signature spice paste. The mixture is then elevated with a house-made bouillon—a labour-intensive preparation that requires 12 to 16 hours of simmering pure fish, beef, pork, or chicken bones.


The restaurant offers eight distinct broth variations, each reflecting Chef André’s culinary journey. Unlike traditional hotpot establishments where diners typically rely heavily on dipping sauces, Bon Broth’s creations are designed to be complete on their own, showcasing a depth of flavour from the first sip.
Warm Space for Exceptional Flavours

The 2,150-square-foot establishment has a dining space that mirrors the thoughtful approach to Chef André Chiang’s broth. The interior features two circular bar seating arrangements that pay homage to traditional communal hotpot dining while maintaining individual dining spaces. Three intimate booth seats, each accommodating up to four diners, cater to small groups seeking a more private experience.

Surrey Hills Holdings CEO Ms. Pang Gek Teng emphasises the establishment’s positioning: “We’ve created a warm space where exceptional flavours and a unique service experience come together, offering something that’s special yet accessible to our diners.”
Accessible Pricing

This accessibility is reflected in the pricing structure, with deluxe set menus starting at S$110 and premium options at S$138. These prices position Bon Broth in the premium casual dining segment, making it an option for both special occasions and elevated everyday dining.
The opening of Bon Broth adds to Surrey Hills Holdings’ expanding portfolio, which includes five Surrey Hills Grocer locations across Singapore and recent launches of Mensho Tokyo and MoVida Originals. For the F&B group, this collaboration with Chef André Chiang represents a strategic move into the premium dining sector.
