1-Alfaro La Torre Main Dining

Amongst the most exciting new restaurants for June 2025 is 1-Alfaro by Monti, perched 34 floors above Labrador Park with views across Singapore’s southern coastline. The venue splits into two distinct experiences: La Torre restaurant for structured Italian dining and La Luna bar for evening social gatherings, mirroring Italy’s traditional progression from meal to aperitivo culture.

Chef Felix Chong and Chef Alessandro Giustteti focus on Emilia-Romagna cuisine. The menu features handcrafted pasta available in half or full portions and fire-grilled sharing meats like the 600g Australia Linz Ribeye. The beverage programme includes signature cocktails inspired by the Italian region, with sharing jugs designed for groups.

The space transforms throughout the day. Bright dining during lunch hours, aperitivo service at sunset, then live DJ sets as night deepens. Floor-to-ceiling windows maximise the harbour and city skyline views, while the outdoor bar extends the experience under open skies.

Choon Hoy Parlor 2.0

Chef Dylan Ong has relocated his tribute to Singapore Soul Food from Beach Road to a larger space at The Capitol Kempinski. The new iteration doubles down on the concept with an expanded menu showcasing the “3H” philosophy: Heritage, Heirloom, and Heartstrings.

The 64-seater restaurant spans two storeys within the building’s sunlit atrium, featuring interiors that blend kopitiam culture with contemporary design. Notable additions include the Oriental Charcuterie Board ($25.90++), featuring five types of Asian-style cured meats, and the refreshed Mocha Prime Pork Rib ($25.90++).

Set menus offer good value. Weekday lunches start at $18.90++ for three courses. The Communal Menu ($59.90++ per person, minimum three diners) provides a curated selection for groups.

Saffrons at Wisma Geylang Serai

The popular Indian Muslim food brand has opened its doors at Wisma Geylang Serai, marking a homecoming of sorts for the 28-year-old establishment. This outlet features glass-panelled windows, an open kitchen concept and seating for up to 140 diners.

Beyond familiar favourites like Nasi Briyani and Mee Goreng, the WGS location introduces exclusive dishes including mee goreng tulang and sup tulang. The restaurant maintains consistent pricing across all outlets, ensuring accessibility remains unchanged. An interesting addition is their multi-function service robot that handles greeting, food delivery and table clearing.

Dolce Vita at Mandarin Oriental, Singapore has a new menu created by Restaurant Chef Roberto Zorzoli, offering a fresh take on classic Italian dishes. From starters, risotto, and pasta to main courses, Chef Roberto invites guests to enjoy the essence of Italy in every dish.

The refreshed menu introduces pinsa – Roman-style flatbreads that are lighter than pizza. Four varieties include the truffle-heavy Tartufo and spicy Piccante with salami. Standout dishes include Polipo Scottato, where Mediterranean octopus meets nduja mayonnaise and artichokes, and housemade Spaghettini Vongole e Gamberi with prawns, clams and white wine sauce. The Risotto Cacio e Pepe translates the Roman pasta classic into rice form. Risotto Allo Zafferano pairs saffron with braised beef cheek. The salt-baked seabream Orata al Sale serves two to four people with oregano blanc sauce. For sharing, there’s also the Insalata del Sud combining romaine, kale, goat cheese and grapes.

Millefoglie Porcini of Dolce Vita

The most intriguing creation is Millefoglie Porcini – dark chocolate layered with porcini mushroom pastry and ganache. This savoury-sweet dessert pushes boundaries beyond the standard tiramisu.

Weekday three-course sets cost $48++ per person. Saturday brunch is $98++ per person, or $146++ with prosecco.
