Shao Tapas at Holland Village is said to bring modern Teochew cuisine and tapas-style dining to the food scene of Singapore. Having been to their first two Shao restaurants in Rangoon Road and Frankel Avenue, we thought that it was time to visit the newest outlet at Holland V.

Modern Teochew Restaurant at Holland Village
From the outside, the dark decor and sparkling display of liquor bottles of the new Shao Holland Village outlet did not fit the image of a typical Teochew restaurant. It may well be mistaken by a casual observer as a Western restaurant or a pub along the Lorong Mambong stretch of f & b establishments in the Holland Village enclave.

It looks much better from the inside, especially in the day time when the central part of the restaurant is brightly lit via a skylight illuminating the central spine of the longish restaurant.

Like the interior design, the Shao Holland Village menu also has a dark colour scheme. Perhaps modern and trendy, but I found it hard to read. Here is a picture of a page from the appetisers section of the menu. These small plate snacks do remind us of tapas servings. These would go well with the wide choice of beverages on the Shao drinks menu. A full menu is available online.

A Modern Teochew Lunch

We thought that Teochew porridge would be an appropriate dish to try at this new Teochew restaurant at Holland Village. The red grouper fish porridge ($48) was a good choice. The porridge was nicely seasoned and tasted good, We especially like the Chinese coriander leaves which gave it very Teochew vibes. There was a fair quantity of red grouper slices. This was a traditional dish served in a classic heavy pot. It was the least “modern” of the food we ate that day, but we thought it was the best.

Shao Tapas Dishes
The next two dishes were more in keeping with the modern tapas theme of the restaurant. Omelette with oysters ($18) was a familiar Teochew restaurant dish. This one was fluffy and nicely done.

Pan-fried Iberico pork ($26) was a less familiar dish. We thought that it was rather salty and the pieces of pork were rather fatty. This was not our favourite dish. I think we should stick to the Teochew restaurant classics in a future visit.
