News: Li Bai Launches Dim Sum Omakase Experience

Li Bai Cantonese Restaurant at Sheraton Towers Singapore will launch a dim sum omakase menu on 15 September 2025. The chef’s choice experience runs until 15 December 2025.

The lunch-only menu costs $108 per person. It marks the first dim sum omakase concept at a major Singapore hotel restaurant.

What is Dim Sum Omakase?

The Japanese term “omakase” means “I’ll leave it up to you”. In this context, diners cannot choose their dim sum items. Instead, the kitchen decides what to serve based on seasonal ingredients and daily preparations.

Li Bai’s culinary team selects items from a reference menu of eight courses. Some dishes remain fixed whilst others change according to the chef’s choice system.

The Menu Details

The set menu covers seven cooking styles across eight courses. Each course represents a different preparation method.

Fixed items include:

  • Scallop dumpling with dried sakura shrimp (steamed)
  • Pork dumpling with spicy sauce (poached)
  • Seafood dumpling with black truffle in superior broth (soup)

Chef’s choice selections rotate among:

  • Abalone, scallop and morel mushroom in crispy rice paper roll (fried)
  • Baked seafood bolo bun
  • Crispy sea cucumber and dried shrimp roe noodle (main course)

Two desserts complete the experience. Diners receive chilled double-boiled snow fungus with dried apricot and basil seed, plus bird’s nest egg tart.

What Makes This Different

The chef’s choice format means returning customers experience variety. Items marked as “chef’s choice” change based on ingredient availability and seasonal considerations. This contrasts with traditional dim sum service where diners select from trolleys or order specific items from printed menus. The set format also allows the kitchen to control portion sizes and presentation timing. Each course arrives in sequence rather than all at once.

The launch reflects growing interest in omakase dining formats beyond Japanese cuisine. Many Singapore restaurants have adapted the concept for Chinese, Western and fusion menus.

Pricing

At $108 per person, the dim sum omakase sits in the premium dining category. Traditional dim sum meals at Li Bai typically range from $40 to $80 per person depending on selections.

The pricing reflects the use of premium ingredients including black truffle, abalone and bird’s nest. Labour-intensive preparation methods also contribute to the cost structure.

Li Bai has operated at Sheraton Towers for several decades. The restaurant specialises in Cantonese cuisine with an emphasis on traditional cooking techniques. The dining room features Chinese-inspired dรฉcor with commissioned paintings by Fan Zeng, a renowned Chinese artist known for his mastery of traditional Chinese paintings and calligraphy. Grand table setting features jade, silver and fine bone china. Previous accolades include recognition in dining guides and prestigious gourmet awards.

The restaurant regularly updates its menu to reflect seasonal ingredients and contemporary tastes.

The omakase menu operates lunch service only from 15 September to 15 December 2025. Advance booking is recommended.
