Grand Hyatt Singapore has reintroduced its afternoon ritual. The Grand Afternoon Tea at 10|SCOTTS now employs a curated semi-buffet format that prizes quality, sustainability and provenance.

The semi-buffet spread includes ASC-certified smoked salmon with horseradish cream and capers, reflecting a commitment to responsibly sourced seafood. Cheeses and charcuterie are sourced from Les Frères Marchand, a French company with seven generations of expertise. Other savoury highlights include an ASC seafood vol-au-vent and a grilled cheese sandwich with mustard and chive. Warm scones are served tableside, paired with clotted cream, jam, and local kaya.

The finale, brought tableside, is an indulgent tier of desserts. This includes a vanilla mille-feuille with layers of red wine poached pear beneath its crisp pastry. An opera cake delivers chocolate intensity tempered by almond and coffee. A cloudlike citrus pavlova and a seasonal fruit tart add a refreshing finish.

The Courtyard at The Fullerton Hotel Singapore presents an autumnal tea experience. The AKI (Japanese for autumn) theme is a collaboration with Chef Makoto Arami. Chef Makoto is a third-generation pastry artisan from AMI Patisserie.

The ensemble blends European and Japanese culinary nuances. The menu features premium ingredients from both land and sea. Savoury highlights include a Sansho Miso Yaki Nasu Madeleine. It is topped with smoky grilled eggplant and shaved parmesan. Other items are the Burrata Cheese and Parma Ham Sando and a Tomato Tartelette. The tartelette features vibrant cherry tomatoes and 24-month-aged parmigiano on a crisp sablé.

The experience focuses on Ele Tea’s bespoke wellness blends. These blends are crafted with natural ingredients for specific benefits. The selection includes an Immunity Tea blend with ginseng and red dates. A soothing Sleep Tea contains rooibos and wild jujube kernel. A restorative Detox Tea incorporates Chinese hawthorn and white tea.

The food mirrors the celestial cycle, presenting treats named after lunar phases. Savoury options include New Moon (watermelon with tomato concasse) and Half Moon (saffron rice balls). Sweets offer richer flavours: the Waxing Blossom is a Chocolate Earl Grey mousse, while Blue Moon features blueberry cream. Other delights include the comforting Silent Night financier and the zesty Aurora grapefruit macaron.
