The Frantzén Group, led by noted Swedish chef Björn Frantzén, premieres Brasserie Astoria, a distinctly international twist on the traditional brasserie experience set in the grandeur of the Victoria Concert Hall.
This is the Frantzén Group’s second venture in Singapore, after their highly acclaimed three-Michelin-star fine dining restaurant Zén. This new, more casual Singapore outpost is Brasserie Astoria’s first outside of Sweden. It mirrors its Stockholm flagship that occupies what was once Astoria Cinema. The new brasserie in Victoria Concert Hall houses 100 seats, a private dining room for 10, and a bar and lounge that seats 22 people.
At Brasserie Astoria, diners can enjoy a diverse à la carte menu prepared by Head Chef Emil Cecil Ess, a former Zén team member. The menu features delightful dishes like Råraka, a Swedish version of rösti made with crispy Agria potatoes and topped with vendace roe. Another highlight is the Toast Astoria, a playful twist on the traditional Swedish Toast Skagen, consisting of generous servings of Baltic prawns and Norwegian king crab, drizzled with wasabi aioli, and served on crisp sourdough bread.
Chef Frantzén said: “Following the success of Zén, we are excited to bring the more casual and accessible Brasserie Astoria to Singapore’s incredible dining scene. We are looking forward to unveiling another facet of the Frantzén Group’s culinary creativity to this food-loving city.”
