Best Peking Duck in Singapore?

Does Mott 32 restaurant serve the best Peking duck in Singapore? It took us three visits to MBS before we finally had a chance to try it. They only have a limited number for each day and the ducks have to be reserved way in advance.

Journey to the Mott 32 Peking Duck

Our first visit to Mott 32 Singapore was in 2020, soon after their opening in MBS Shoppes. The Mott 32 Hong Kong restaurant is known for the Peking duck, so that was one of our principal objectives. But we were unsuccessful – we learnt that the duck has to be ordered in advance. So we had a lunch of dim sum and their famous char siew (picture below).

Our second visit was earlier this year. An online reservation was made followed by a telephone call to request for a duck reservation. We thought that two weeks would be sufficient to secure a duck, but that was not the case – we would be on a wait list. Still we thought that should be sufficient time for a duck to surface but that was not the case. And so we had a lunch of cooked dishes – it turned out to be a good lunch. Their claypot dishes (picture below) are very good.

Third Visit to Mott 32 Singapore

Today, we will tell you about our third visit to Mott 32 when we finally got to meet the famous duck, described by many as being one of the best Peking ducks in Singapore.

For a change we were seated in an inner section of the restaurant. The ambience is very different from the main dining hall which we experienced at our first two visits. This small area reminded us of a luxurious train dining car. Long, narrow and luxuriously appointed.

Mott 32 Singapore Wine List

Here is are pictures of sample pages from the wine list. Mott 32 has a good wine selection. We picked a bottle of red wine from the Jura region of France, something we have never tried before. It is apparently a region situated between Burgundy and the neighbouring Switzerland.

The 2016 Domaine Rolet Arbois is one of the more affordable wines on the list ($118++). It is made from Trousseau grapes. The wine is very light and uncomplicated. Suitable to be drank very soon after being poured.

The light cherry red colour of the wine and sparkling glassware also looked extremely beautiful in this glitzy setting of the restaurant.

Best Peking Duck in Singapore Menu

According to the restaurant website, the Mott 32 Signature Apple Wood Roasted Peking Duck is smoked with sweet aromas of dried apple wood. It is carved ” ... using a unique technique that locks in all the juices developed by our founders making it a true feast fit for royalty as it was intended”. It is said to be suitable for around 3–4 guests. Since we had the whole duck to ourselves we had a one-course lunch. It was duck season only. The duck costs $128++. Any unused meat can be used in another course. We chose the “Preserved Duck Liver Sausage, Minced Duck, Lettuce Cup” preparation which cost an additional $20.

Finally, the duck arrived. It looked very much like a regular roasted duck in a Chinese restaurant, but perhaps a bit bigger and lighter in colour. It was carved up at the table and served in different sections.

The first dish was the skin only. This was probably from the breast part of the duck where the skin is thin and flat. The golden brown colour looks very good but we found it to be less crisp than the usual Peking duck.

Next to arrive were three more servings of duck, this time in a combination of skin and meat. We found the meat to be nice and moist. But there was hardly any duck flavour – which might be a good thing for those who dislike any hint of gameyness. For us a slight duck flavour would be nice, but less is better than too much duck flavour.

‘Pancakes’

What deserves special mention are the freshly steamed pancakes that are used to wrap the duck. We are not sure that the Mott 32 duck is the best Peking duck in Singapore, but the supporting actor is easily the best duck wrapper in Singapore. These popiah skin-like crepes are fine and soft. So delicate, they need paper separators to prevent them from sticking together. Together with sliced cucumber, scallions and a special hoisin sauce, they complete the whole Peking Duck dining experience.

Second Course – Fried Duck and Lettuce

We were glad we did not choose fried noodles or fried rice as the second course. It must have been a large duck as the leftover meat was quite substantial. These were fried with liver sausages to create a wonderful tasting mix.

The refreshing crunch of fresh lettuce balanced the oiliness of the fried duck. This brought our duck lunch to a nice completion. One duck for two person is just nice if no other food is ordered. The lightly chilled, pleasant red wine was certainly useful to have for a heavy meal like this.

Was it the Best Peking Duck In Singapore?

We cannot say that it is because we like our Peking duck with crispy skin. The Mott 32 seems to be a different version of Peking duck so some may prefer it this way. What we can say is that this was one of the best Peking duck dining experiences as we love the ambience of the restaurant and way the duck was served. The second course also turned out very well.
