New Bahru, the latest lifestyle destination in River Valley by The Lo & Behold Group, opened for a sneak peek last weekend. A number of dining and retail concepts at the former Nan Chiau High School building have opened their doors. Huevos, a casual eatery promising a taste of Mexico, is one of them.
Huevos River Valley
Located on the ground level of New Bahru, Huevos has the cool, casual Mexican cantina look. Bare concrete floors meet a rustic industrial aesthetic, with vibrant colours on the walls. The streetside bar vibe makes it ideal for a relaxed catch-up with friends, rather than a formal sit-down dinner.

Huevos’ menu is a straightforward Mexican restaurant menu. It has all the classics – nachos, tacos, burrito bowl and quesadillas. The focus is on delivering authentic Mexican comfort food at a reasonable price point. It also seves drinks like Horchata and Jarritos as well as Corona Beer and Margarita.

Burrito & Quesadillas
We visited Huevos River Valley for lunch and opted for two dishes – the Breakfast Burrito with Chorizo ($14) and the Trinity Mushroom Quesadilla ($16).
The Breakfast Burritoa was served just wrapped in foil. It was a huge roll – a crispy-skinned delight filled with fluffy hash browns, scrambled eggs, creamy guacamole, cheese, a refreshing pico de gallo salsa, hearty frijoles (beans), and a smoky chipotle kick. It was a flavour explosion in every bite, and definitely big enough to share.
The Trinity Mushroom Quesadilla was visually appealing, arriving presented like a pizza. The combination of three different mushrooms, along with a chipotle aioli, tangy sour cream and cojita cheese, offered a medley of textures and earthy flavours. We found it best enjoyed fresh off the griddle, where the cheese remained melty and the flavours were most vibrant.

Overall, Huevos delivers a strong value proposition. The food is delicious, the portions are generous, and the staff are friendly and helpful. A welcome touch, especially in Singapore’s heat, is the complimentary iced cold water served upon arrival. Be prepared for a slightly longer wait for your food, but the lively atmosphere makes it easy to relax and soak in the vibes.
A note about visiting New Bahru: If you are planning to visit New Bahru, be aware that while the buzz is exciting, many restaurants and shops haven’t opened yet. Renovation works might also be ongoing. This could result in encountering more workmen than customers, and limited dining options might make securing a table a challenge. Staff at some establishments, overwhelmed during this initial phase, might not be as welcoming (speaking from our own experience on a Friday afternoon at an unnamed New Bahru restaurant, which we hope was an isolated incident). However, Huevos stands out. We, along with many other customers, were warmly welcomed and received excellent service despite the the staff being busy.
