Pullman Singapore Hill Street and Old Chang Kee have launched a special afternoon tea, a fusion of familiar local tastes and refined dining, for SG60 celebrations. Available at Madison’s, the hotel’s American diner-style venue, the collaboration brings together iconic Singaporean snacks and elegant tea-time traditions.


Those looking for a taste of Singapore’s culinary heritage will find it in the carefully curated menu. Sweet offerings include a moist Ondeh Ondeh cake, its pandan fragrance and gula melaka sweetness a clear nod to local kueh. The Gula Melaka mousse, layered with mango jelly, provides a tropical counterpoint, while the mango pudding with sago and pomelo offers a refreshing, light finish. Pandan scones, served with rich kaya and whipped cream, present a classic tea-time treat with a distinctly Singaporean twist.
The savoury selection features familiar flavours elevated with contemporary techniques. Confit chicken brioche, accented with a chili mayonnaise, provides a satisfying bite. The Mini Pullman Style Rojak offers a deconstructed take on the local salad, allowing diners to appreciate the individual components.


Central to the experience are miniature versions of Old Chang Kee’s beloved snacks. The Curry Potato Puff, with its flaky pastry and spiced potato filling, delivers the familiar comfort of a local favourite. The Sardine Puff, its spiced sardine filling encased in a golden crust, offers a bolder flavour profile. A highlight of the savoury selection is the Laksa Shrimp Vol Au Vent. This dish layers a creamy laksa base, infused with Old Chang Kee’s signature laksa paste, with succulent shrimp and a touch of caviar, creating a luxurious and complex flavour.

To complement the food, guests can choose from standard coffee and tea, or opt for locally inspired beverages. Nespresso’s Kopi C and Teh Tarik, made with Dilmah tea, provide a sophisticated take on traditional Singaporean drinks.
The collaboration aims to blend Old Chang Kee’s history, from its beginnings as a humble stall, with Pullman Singapore Hill Street’s modern dining experience. It offers a chance to experience well loved local food in a new environment.
The afternoon tea, available Mondays to Saturdays, is priced at $88++ for two.
