The Mosella brunch experience promises originality and high-quality dishes influenced by the rich and varied Mediterranean-inspired cuisine. A rotating lineup of expertly crafted dishes will include signatures like the Gamba Roja al “Ajillo” – a flavourful dish of Mediterranean red prawn with garlic, chili, and smoked paprika, and the Cochinillo – a succulent, crisp-skinned Spanish suckling pig accompanied by a roasted apple purée.
Complementing the main courses, guests are invited to indulge in an assortment of exquisite desserts, patisserie creations, fantastical chocolates and artisan cheeses, all arranged at dedicated stations for limitless enjoyment.
The brunch experience is elevated by the soothing harmonies of live jazz music.

Eden Restaurant Unveils a New Menu of Creative Asian Flavours
Eden Restaurant, the light-filled greenhouse space set within Pullman Singapore Orchard, has unveiled a new menu. From Bao buns to sharing platters, statement small plates to wok specials, the new menu has been designed to accommodate every occasion throughout the day.
New Executive Chef Martin Tan has redesigned the menu to showcase Asian flavours through a creative and contemporary lens. Expect a unique interpretation of multicultural flavours.
New signature additions to the menu include Bao Buns such as Sticky Pork Belly ($18++ for 2 pieces) with salted vegetables and Singapore Chilli Crab ($18++ for 2 pieces). There is an array of playful, contemporary Asian dishes – like The Bi Feng Tang Crispy Squid ($28++) and Kam Heong Grilled Octopus ($32++).
The Chef’s favourite is the Pan-Fried Black Cod ($42++), a Hakka-inspired dish where a plump fillet of cod sits on a homemade herbaceous broth made using the distinct flavours of green tea powder, laksa leaf, coriander leaf, spring onion, herbs and fish stock and is garnished with pickled radish. Other mains include Hae Bee Hiam Australian Lamb Rack ($48++) and River Prawns, Scallop, Local Farmed Mussels ($44++).

Butcher’s Block: 2024 Spring menus spotlighting local harvests
Butcher’s Block brings the farm to the table. A tribute to helming chef Jordan Keao’s native Hawai’ian heritage, the refreshed Spring menus celebrate nature’s best through harvests straight from the restaurant’s local farm – just as Chef Jordan would at his home island of Hawai’i.
Through a new partnership with Singaporean indoor vertical farm, farmd, what is required – and with no excess – is grown on Butcher’s Block’s very own plot, just kilometres away from the restaurant. The farm presents bright flavours of pesticide-free seasonal bounty of the restaurant’s preference all year round, cultivated with a hybrid horticulture method combining hydroponics with untouched peat.
From French radishes to Asian bok choy and microherbs, a mix of vibrant local harvests enhances the dishes in the refreshed IMUA tasting and a la carte menus. And with lunch service now extended to the weekends, guests have more reasons to enjoy the Butcher’s Block experience.
In the spirit of ohana or family in Hawai’ian, partake in a communal meal of a la carte creations, great for sharing amongst family and friends. Enjoy the expanded ‘Chef’s Prime Selection’ of large format beef from Rangers Valley in New South Wales, Australia, or luxuriate in the highly marbled and umami-forward Rangers Valley Full-blood Wagyu OP Rib; and the Dry-aged Full-Blood Wagyu OP Rib. The à la carte menu also offers an abundance of dishes featuring the locally farmed vegetables and herbs.

New Chef De Cuisine Gerald Liau Zhi Yuan brings new executive menus which showcase his creative talent. Key highlights include Beef Tartare and Halibut.
The Beef Tartare is a French classic that is infused with Asian influences through a spiced pepper marinate; a mix of sesame and Korean Gochujang paste that bestows the addictive mix of spice, tanginess and fragrance to this creation.
The Halibut is prepared in two different variations. For lunch, it is paired with green and white asparagus along with black garlic textures. The dinner variation is a unique combination of zesty coconut velouté, creamy pumpkin and topped with caviar.
