Botanico, a restaurant by 1-Group, reopens in a new location at The Summerhouse in Seletar. The restaurant promises a fresh take on familiar Asian flavours using innovative techniques and the freshest ingredients.

Located in the historic Seletar Airport precinct, Botanico offers a tranquil escape from the city. The restaurant’s core revolves around the art of grilling, with wood charcoal, binchotan and applewood imbuing dishes with a touch of smokiness and enhancing the natural flavours of the ingredients.
Executive Chef Lamley, who heads Asian culinary development for 1-Group, has designed a menu that draws inspiration from the restaurant’s own edible garden. Over 20 varieties of herbs and vegetables find their way from garden to plate, while the other fresh produce is sourced from local farmers and a nearby kelong.
Menu Highlights
Diners can expect innovative takes on classic Singaporean fare, like the Foie Gras Kaya Toast ($12++) – a decadent twist on the local breakfast staple featuring house-made foie gras kaya on chargrilled brioche. Another highlight is the Sakura Papaya Salad ($16++) with its refreshing combination of sakura shrimps, green papaya, garden chilies, pistachios, and a palm sugar fish sauce dressing.
For a tastebud-tingling adventure, go for the Sichuan Boiled Fish ($65++). This whole seasonal fish, swimming in a flavourful mala sauce with Sichuan peppercorns, comes accompanied by farm-grown vegetables and a delicate Butterfly Blue Pea Pandan Rice ($6++) perfect for soaking up the delicious sauce.
Meat lovers will rejoice at the Wagyu Bun ($45++), featuring high-quality sliced and chargrilled Japanese Wagyu nestled in a fluffy lotus leaf bun with bulgogi sauce, perilla leaves, and pickled daikon. Other enticing main courses include the Wood-Fired Grilled Duck ($34++) with its subtle angelica sauce, Iberico Pork Rib ($36++) boasting a unique Bak Kut Teh-inspired sauce, and the Char Siew Wagyu ($52++) served with broccolini and a classic XO sauce.
No meal is complete without dessert, and Botanico delivers with a playful selection. The Min Jiang Kueh ($18++) reimagines the Southeast Asian peanut pancake with rich peanut ice cream, crispy peanut tuile, and a light corn-flavoured sponge. Diners can also indulge in the Ginger Flower Panna Cotta ($16++) or Ondeh Ondeh ($16++) for a delightful finale.
