Dusk @ Mount Faber Peak: A Refreshed Dining Experience
Dusk @ Mount Faber Peak has been revamped and now reopens as a casual dining concept. The restaurant’s new menu showcases modern European cuisine infused with Asian influences, providing a delightful dining experience that complements the stunning backdrop of the setting sun.
One of the highlights of the new menu is the Jumbo River Prawn Thermidor ($32). This exquisite dish is inspired by the classic European Lobster Thermidor and features grilled river prawns drizzled with a tangy yet mildly-spicy peanut Béchamel sauce. The result is a harmonious blend of smoky flavours and creamy textures that is sure to impress.
Other popular dishes that continue to delight guests include the Dusk Signature Prawn Capellini ($28) and the French-Cut Rack of Lamb ($88). These dishes offer a combination of classic flavours and modern techniques that are sure to satisfy even the most discerning palate.
The Mirabilis Bar: A Floral-Themed Oasis
Named after the enchanting Four O’Clock flower, The Mirabilis Bar is a unique destination bar that offers a vibrant atmosphere and innovative floral-infused cocktails. The bar’s centerpiece is a five-meter tall Mirabilis flower-inspired sculpture that is illuminated at night, creating a captivating sight.
The bar’s cocktail menu features a series of classic cocktails with a floral twist, curated by acclaimed bartender Anton Gornev. Each cocktail is meticulously crafted and presented in a pre-to-post-dinner sequence, aiming to complement the meal and whet appetites.
Some of the signature cocktails at The Mirabilis Bar include the Chamomile Paloma ($22), the Hibiscus & Rose Sour ($22), and the Bergamot & Elderflower Negroni ($22). These cocktails offer a refreshing and flavourful experience that is sure to delight.
In addition to its impressive cocktail menu, The Mirabilis Bar also offers a selection of delectable bar bites. Highlights include the Mirabilis Blossoms ($20) – Confit Fjord Trout Tartare on Crispy Rice Paper – and Watermelon Sashimi ($14) – compressed watermelon slices accented with feta cheese crumble, white balsamic, and pine nuts.
