The Dumpling Festival (端午节 “Duan Wu Jie”), also known as the Dragon Boat Festival, falls on the fifth day of the fifth month of the Chinese lunar calendar. In 2025, this will be on Saturday, 31 May. While the delicious glutinous rice dumplings, or bak chang as we call them here in Singapore, are enjoyed year-round, the arrival of the Dragon Boat Festival sees hotels and restaurants introducing a tempting array of luxurious and innovative bak chang flavours – such as Chicken Satay, Kimchi Rice with Kurobuta Cured Meat and Kung Pao Chicken with Morel Mushroom. Here are six places to explore for interesting bak chang this year.

The Fullerton Hotel Singapore’s Jade restaurant presents new and returning flavours for its Dumpling Collection 2025.

Special Dumpling for SG60
Chef Leong Chee Yeng created a special dumpling for SG60. It takes inspiration from local hawker fare. The Chicken Satay Rice Dumpling ($22) is a highlight. It features chicken thigh and king oyster mushroom. A house-made satay sauce adds flavour. Peanuts are also included. The filling is wrapped in glutinous rice.

Other local flavours are also available for Dumpling Festival 2025. The Nyonya Blue Pea Rice Dumpling returns. It has minced pork and mushrooms. Candied winter melon adds sweetness. The Hokkien Salted Egg Yolk Rice Dumpling is another returning favourite. It contains braised pork and salted egg yolk.


Classic & Vegetarian Options
For those who prefer classic tastes, there is the Traditional Hong Kong-style Abalone Treasures Rice Dumpling ($58). This large dumpling includes abalone and roasted meats. It also has dried scallop and lotus seed.
A vegetarian option is also offered. The Truffle and Trio Mushroom Five-grain Rice Dumpling features various mushrooms and truffle.

Gift hampers are available. The Jade Sentiments Gift Basket costs $88. It includes three dumplings. The Jade Harmony Gift Basket has all six flavours. It is priced at $158. Both come with a reusable basket. The Harmony basket also has chilli sauce.

Man Fu Yuan at InterContinental Singapore presents seven artisanal flavours for this year’s Dragon Boat Festival.
New Flavours for Dumpling Festival 2025
A new flavour for Dumpling Festival 2025 is the Kimchi Rice Dumpling ($23.80). This dumpling mixes the taste of aged kimchi with Kurobuta pork and mushrooms.

Another new flavour is the Sweet Pumpkin Duo Rice Dumpling ($19.80). This sweet dumpling combines black glutinous rice and pumpkin with aromatic black sesame seeds.

Man Fu Yuan Giant Classic Cantonese Rice Dumpling
The Man Fu Yuan Giant Classic Cantonese Rice Dumpling with Red Quinoa ($98.80) returns. This large dumpling weighs 1kg. It contains abalone, five-spiced pork belly and giant dried shrimps from Hong Kong. Red quinoa, roasted duck and dried conpoy are part of the filling. Only 99 of these dumplings are available.

Other flavours include a Nonya-Style Rice Dumpling with Plant-Based Meat. There is also a Nonya-Style Rice Dumpling with XO Sauce. A sweet option is the Glutinous Rice Dumpling with Red Bean, Honey Date, and Red Date. The Traditional Hokkien-Style Rice Dumpling is also available.
Each order of five dumplings comes in a special box. The cream box has illustrations of birds and flowers. A golden tassel adds a touch of luxury. The box also has a strap. It can be used as a shoulder bag.
Two gift sets are offered. The Mastery Bundle includes five dumplings and tea. It costs $129.80. The Indulgence Bundle has five dumplings and champagne. It costs $189.80.

3 New Flavours

Three new flavours are introduced for Dumpling Festival 2025. One is the Teochew Beef Rice Dumpling ($48). This large dumpling contains beef short ribs and salted egg. Chinese mushroom and braised peanut are also inside. Barley and preserved winter melon complete the filling.

Another new flavour is the Kung Pao Chicken and Morel Mushroom Rice Dumpling ($38). This dumpling features chicken and morel mushroom. Conpoy and dried shrimp add flavour while Sichuan peppercorn and dried chilli give a hint of spice. Cashew nut and couscous are also included.
For those who like sweet dumplings, there is the Lotus Paste Kansui (Jianshui) Rice Dumpling. Two pieces cost $38. The filling is a fragrant lotus paste.

Traditional Options
Li Bai also offers traditional options. The signature Traditional Rice Dumpling is available in two sizes. The large one costs $58. Two regular-sized dumplings cost $68. This dumpling is filled with pork belly and roast duck. It also has Chinese mushroom and chestnut. Salted egg, conpoy, and dried shrimp are included.

The Abalone and Pumpkin Rice Dumpling ($58) is another popular choice. This indulgent dumpling contains a whole abalone. Pumpkin, Chinese mushroom pork, salted egg, chestnut, conpoy, and mung bean complete the filling.

New Offerings
The Pork Trotter & Peanut with Szechuan Green Peppercorn Rice Dumpling ($25) is a new offering. Pork trotter is slow-braised and marinated in green peppercorn sauce. This gives it a spicy, numbing taste. The dumpling is then poached for hours. It also contains peanut and black fungus.
Another new flavour offers a sweet taste. The Pandan Gula Melaka with Shredded Coconut & Quinoa Glutinous Rice Dumpling ($18) is inspired by Ondeh Ondeh Kueh. The centre has gula melaka and coconut. Purple sweet potato is also included. The dumpling is wrapped in pandan rice, quinoa and green bean.

Luxurious Choice
The 5-Head Abalone with Karasumi & Iberico Pork Rice Dumpling ($38) is a luxurious choice. This dumpling contains abalone and scallop. Karasumi, a dried mullet roe similar to caviar, and tender Iberico pork complete the premium ingredients.

The Signature Pork & Salted Egg Rice Dumpling ($20) is a popular option. Premium pork is marinated for over 24 hours. Salted egg yolk, mushroom, black bean and chestnut are added and wrapped in soft glutinous rice.
Vegetarian Option
For a vegetarian option, there is the Cordycep Flower & Purple Glutinous Rice Dumpling ($18). This dumpling has mullet rice and purple glutinous rice. Cordycep flower and black bean are included. Peanut and king mushroom add texture while preserved vegetables and black truffle paste enhance the flavour.

Supreme Rice Dumpling
The Hai Tien Lo Supreme Rice Dumpling ($45) is a highlight of the restaurant’s selection of traditional rice dumplings. This large dumpling is filled with pork belly and whole abalone. Roasted duck and whole dried scallops are also included. Chestnuts and green beans add texture and lotus seeds and premium glutinous rice complete the package.


The Black Glutinous (Pulut Hitam) Nyonya Rice Dumpling ($22) offers a fusion taste. Black and white glutinous rice are mixed with lean pork. Candied melon and Japanese mushrooms add sweetness. Shallots and garlic enhance the flavour.
The Hokkien Rice Dumpling with Pork and Salted Egg Yolk ($18) is a popular choice. Five-spice pork belly and salted egg yolk are combined with green beans and premium glutinous rice.
For a sweet option, there is the Teochew Rice Dumpling with Yam Paste, Chestnuts and Gingko Nuts ($15). This dumpling is inspired by the Teochew dessert Orh Nee. It features creamy yam paste, chestnuts and gingko nuts.
New Flavour
A new flavour this year is the Salted Fish and Preserved Meat Rice Dumpling ($24). This dumpling combines salted fish and preserved meat. Spanish pork and peanuts are also inside.


Hai Tien Lo also offers rice dumpling sets. The Premium Rice Dumplings Set costs $158. It includes six dumplings and XO chilli sauce. The Classic Rice Dumplings Set costs $118. It also has six dumplings and sweet and sour spicy bean paste sauce.

At Wah Lok Cantonese Restaurant, the Dried Oyster & Conpoy Dumpling (瑶柱蚝豉熏鸭粽) makes its debut this Dumpling Festival 2025. It costs $28.80 for a 600g piece. This handcrafted dumpling showcases Cantonese cooking. Premium glutinous rice wraps the filling. Inside, there is smoked duck and Japanese conpoy. Chestnuts add a crunch. Lotus seeds provide a subtle sweetness. The dumpling aims for a balance of umami flavours.
