The MICHELIN Guide Ceremony in Singapore took place on 27 June 2023 at PARKROYAL COLLECTION Marina Bay. The unveiling of the MICHELIN Guide Singapore 2023 saw 5 new restaurants inducted with 1 star, and the 3 culinary stalwarts retaining their 3 stars.
New Stars
Contemporary fine-dining Restaurant Born enters the Michelin Guide Singapore with its first Michelin star. Other newcomers with 1 star are Poise, Sushi Sakuta, Seroja and Willow.
BORN is a fine-dining restaurant of contemporary cuisine set within the iconic Jinrikisha Station. The new restaurant which is the brainchild of Chef Zor Tan debuted at #36 in Asia’s 50 Best Restaurants 2023. It gains its first Michelin star as the restaurant approaches its first anniversary.
Poise is also a new restaurant offering cuisine described as “modern European dining with a Nordic touch”.
Another newly opened restaurant, Seroja, was also awarded 1 star. Seroja which celebrates the culinary culture of the Malay archipelago was also given the first ever Singapore Michelin Green Star award (recognising restaurants that offer dining experiences that combine culinary excellence with outstanding eco-friendly commitments). Seroja’s chef Kevin Wong also won the Michelin Guide 2023 Young Chef Award.
Sushi Sakuta won its first One MICHELIN Star. Owner-chef Sakuta offers a season-driven omakase menu based on sushi and Japanese fish.
At Willow, Chef Nicolas Tam offers Asian contemporary cuisine using French techniques to prepare mostly Japanese ingredients.
Hill Street Tai Hwa Pork Noodle is still the only hawker stall in Singapore that has a Michelin star.

Michelin Guide 3 Stars
There was no change among the 3-starred restaurants, recognised for exceptional cuisine, worth a special journey.
Les Amis, Odette and Zén were awarded 3 stars in the Michelin Guide Singapore 2023.
2 Stars
There was also no change in the 2 stars list.
