A Fiery Business Affair: Butcher’s Block at Raffles Singapore

Butcher’s Block at Raffles Hotel Singapore is an avant-garde restaurant celebrating fire and premium meats. Its three-course business set menu offers a great opportunity to experience the restaurant’s finest produce, meats or seafood, transformed by the intense heat of a wood-fired grill.

Butcher’s Block is located on the second level of Raffles Arcade (at the section of the building nearer to Raffles City). The interior blends sleek design with a touch of old-world charm, with wood paneling and clever use of glass elements. A floor-to-ceiling glass chiller showcases a selection of premium cuts of meat. There is a well-stocked wine cellar, visible through glass walls.

The space is divided into several distinct areas, each with its own unique ambiance. The main dining room is a sophisticated and inviting space, with plush seating and soft lighting. The centerpiece of the room is the open kitchen, where diners can watch chefs prepare dishes over the wood-fired grill.

The restaurant is led by Chef de Cuisine Jordan Keao, a native Hawaiian who grew up in a culture where open-fire cooking, fishing, and farming are a way of life. At Butcher’s Block, he uses the transformative power of wood-fired cooking and the finest meats, seafood, and produce, including those from Butcher’s Block’s own farm, to create innovative and delightful dishes.

Butcher’s Block offers both à la carte and set menus, as well as exclusive off-menu creations. For a more affordable lunch option, the three-course business set menu is a great choice.

You can view the menus on the restaurant’s website. Below is a picture of the Business Lunch Menu.

Hokkaido Milk Bread was served with Seaweed Butter before the first course. Both the bread and butter were excellent.

Grilled Golden Oyster Mushroom

My first course was Grilled Golden Oyster Mushroom served with mustard green and Chinese BBQ spice. The mushrooms had a tender yet firm texture with slight crispness on the edges. The Chinese BBQ spice added complexity and made everything taste better. The dish had a nice combination of smoky, tangy and savoury flavours. A delectable and satisfying first course.

Little Joe Australian Tenderloin

The Little Joe Australian tenderloin, cooked to a perfect medium, had a seared exterior with a caramelised crust. Inside, the tenderloin was juicy and pink. The meat was rich in flavour, buttery, tender and succulent, while a drizzle of beef jus enhanced its depth of flavour.

The parsnip purée served with the dish was a delightful surprise. It resembled mashed potato but tasted far superior. Velvety and smooth, with a luxurious creamy texture and a natural sweetness, it added to the dish’s indulgence.

Dessert & Wine

Smoked Cheesecake at Butcher's Block

The Smoked Cheesecake was an intriguing take on the classic dessert. The cheesecake was creamy and dense, tasting more like cheese than cake. It had a rich flavour with a smoky undertone. Topped with grilled berries, which offered natural sweetness and a subtle smokiness, the dessert was a perfect balance of flavours and textures.

The red wine served was a smooth and fruity Jean-Luc Colombo Côtes du Rhône Les Abeilles Rouge, a great match for grilled meat.
