News: Le Pristine Introduces Sunday Brunch and Supper at Grand Hyatt

Grand Hyatt Singapore’s modern European restaurant Le Pristine Singapore will launch new Sunday dining experiences from September 7. The restaurant, conceived by former three-Michelin-starred chef Sergio Herman, will offer both brunch and supper services exclusively on Sundays.

New Operating Schedule

Le Pristine Singapore has restructured its weekly operations. The restaurant will serve dinner from Wednesday to Saturday, 6 pm to 9 pm. Sundays will feature brunch from 12 pm to 3 pm, followed by supper from 6 pm to 9 pm. The restaurant remains closed on Mondays and Tuesdays.

The Sunday brunch costs $135 per person. The menu includes a cold selection with Salad Le Pristine, vitello tonnato, and pumpkin burrata. A seafood bar offers hamachi, tuna, Irish Mor oysters, and gambero rosso with fingerlime.

Live cooking stations serve pizzette marinara, ravioli ricotta verbena, and barbecue gambero. The meal concludes at a dessert bar featuring soft-serve ice cream with toppings, tiramisu, panna cotta, and chocolate tart.

Sunday Supper Menu

Sunday supper is priced at $125 per person. It features the same cold selections and seafood bar as brunch. Main courses include Sergio’s Father’s Fish Soup, lamb with eggplant and tomato, seafood orecchiette, and chicken vol-au-vent.

The fish soup recipe comes from Chef Sergio Herman’s time working with his father at Oud Sluis, the three-Michelin-starred restaurant in the Netherlands. Herman says the dish represents his commitment to balancing heritage with contemporary creativity.

Beverage Options

Both brunch and supper offer a 2.5-hour free-flow beverage package starting from $50 per person. The selection includes spritzes, cocktails like Bloody Mary, Bavik Super Pils beer, and non-alcoholic options such as Italian Sour.

Wine choices feature selections from France, Australia, and New Zealand. Premium options include Dom Pérignon Brut and Moët & Chandon Brut champagne.

Music Programme

Le Pristine Singapore has introduced a curated DJ programme designed by DJ Eden YC. The music focuses on three elements: Uplifting, Soulful, and Hopeful. Genres include R&B, jazz, funk, and soul.

September’s DJ lineup features Eden YC, Duri0, James Selva, Candice B, and Fvder. The programme runs throughout both brunch and supper services.

Singapore Food Festival Participation

From September 4 to 24, Le Pristine Singapore will participate in Singapore Food Festival 2025. The restaurant will offer a special tasting menu at $180 per person, featuring modern European interpretations of local flavours.

Festival menu highlights include chilli king crab pizzette, Sergio’s Father’s Fish Soup with locally sourced seafood, and Baba “Singapore Sling”. Wine pairings cost $60 for three glasses or $75 for four glasses. Non-alcoholic pairings are available for $45 for three glasses.

Chef Sergio Herman says the Sunday offerings reflect his father’s teachings about food being centred on care, connection, and attention to detail. “Our Sunday Brunch and Supper menus are an opportunity for guests to savour the moment, with dishes that reflect my heritage while celebrating Singapore’s vibrant culinary spirit,” Herman said.

The brunch aims to be a lively, abundant experience designed for sharing and discovery. The supper offers a more intimate dining experience inspired by family traditions from Herman’s Zeeland heritage.
