Mala’s The Word At Andaz Singapore
From 26 August 2019
Sweat it out at Auntie’s Wok and Steam as Andaz Singapore launches Auntie’s Mala claypot and beer sets at just SGD60, great for two persons.
A combination of two Chinese characters, mala (麻辣) which roughly translates to “tongue numbingly spicy” is a fiery and numbing sauce originating from Chongqing, China. A potent concoction of Szechuan peppercorn, chilli pepper and spices simmered with oil, Auntie’s Wok and Steam’s rendition of this Chinese delicacy is pure indulgence. Diners can choose from three different kinds of premium proteins as the base for their mala claypot dish – sustainable Barramundi, Kurobuta pork collar or Australian Wagyu beef – and watch as our chefs stir-fry their choice with lotus root slices, shimeji mushrooms, wood ear mushrooms and cabbage in a fragrant chilli-laden sauce.
Available during dinner daily, each Auntie’s Mala Claypot Set (SGD 60) is suitable for two persons and comes with a side of firecracker fried chicken, steamed rice and an ice-cold bucket of four Andaz Pale Ales to quell the heat. Diners who prefer to have a pot to themselves can opt for an À La Carte Mini Mala Claypot Set. Priced at SGD 25, each À La Carte Mini Claypot Set is good for one person and comes with a side of mini firecracker fried chicken and steamed rice. Additional Andaz Pale Ales are available at a promotional price of SGD 8 per bottle with any items ordered from the Auntie’s Mala menu.
For something special, try out a limited release of Young Master Brewery’s “Mala Xiang Jiu” (SGD 10), a Sichuan peppercorn lager. Hailing from Hong Kong, with a sold-out release at Beerfest Asia 2019, this beer uses traditional malts for a clean and crisp base, new world hops for an added flavour punch and a touch of heat from chilies and Sichuan peppercorns.
