White Marble is a new Mediterranean restaurant at Orchard Rendezvous Hotel. It is one of the best new restaurants in 2022 that we have tried so far.
New Restaurant at Orchard Rendezvous Hotel Singapore
Orchard Rendezvous Hotel is the former Orchard Parade Hotel, which in turn was previously the Ming Court Hotel, Singapore. It has a row of restaurants facing Orchard Road. White Marble is one such restaurant. I believe it takes over the space that used to be occupied by Modestos. Its next door neighbour is Brewerkz. The new restaurant is described as a Mediterranean grill restaurant by Chef Otto Weibel who is also behind the Black Marble, a steak restaurant in Holland Village. The new White Marble restaurant showcases flavours from the Mediterranean region, such as Spain, Portugal, France, Morocco, and the Middle East.
The restaurant is large and spacious. We like the well-lit interior with clean lines. There are some alfresco tables in the front that look welcoming in the afternoon and will be even better in the evenings.
White Marble Restaurant Menu
Here is a picture of a sample page from the White Marble menu. The full a la carte menu is available online. Currently, there is the option of a 3-course set lunch priced from $35++. We decided to try items from the a la carte menu which had a distinct Mediterranean feel. These were the items that we ordered: Flatbread with Spices ($8), Roasted Butternut Squash ($12) and Chicken Leg Bone-in Tagine ($60).
Our White Marble Lunch
Lunch at the White Marble started with a basket of warm flatbread lined with lots of herbs and spices. This was tasty enough to be eaten as they are presented, but they can be enhanced by dipping into the n cold pressed olive oil with aged balsamic vinegar or the salbitxada sauce provided. The latter, according to my quick internet search, is a classic tomato-based Spanish dip.
We love how a common butternut squash could be transformed into this delicious dish. The squash was roasted till thoroughly soft and sweet. Chili yoghurt, coriander and sunflower seeds provided more flavours.
The Tagine
The tagine is a type of pot that fascinates us. The design is both beautiful as well as functional. During cooking, steam goes up the cone. Some of it condenses and returns moisture into the dish. It brings up visions of Morocco, a vacation destination that we have never been to but is on our to-do list. It was therefore a no-brainer when we saw it on the menu. The dish is meant for 2 persons.
As you can see, the chicken leg bone-in tagine dish looks delicious. Two large chicken thighs, well cooked but still juicy. Lots of spices, nuts and olives added interest to the rich gravy.
We were impressed with the lunch at White Marble as we had ordered some of the most affordably priced items. It was a satisfying lunch without expensive cuts of beef, exotic seafood or decorative flowers and trimmings. Good cooking and the smart blend of spices and herbs were good enough.
