A new Japanese restaurant is opening at Mondrian Singapore this May. Firebird by Suetomi is the first international branch of Makitori Shinkobe, a popular Tokyo yakitori spot with a one-year waitlist.

Led by Japanese chef Makoto Suetomi, Firebird focuses on tori (chicken) in a 13-course wood-fire omakase menu. Priced at $188++, the experience includes skewers and small dishes that use different chicken parts. The dishes are cooked using techniques like grilling, roasting, and smoking over wood fire.

Each plate is kept simple, allowing the natural flavours to shine. The chefs also add global elements to the dishes. A curated selection of sake, shochu, wine, and cocktails is available.

At the counter, 12 guests can watch the chefs at work. There is also a private room for eight and a small five-seat bar.

Mandarin Oriental, Singapore and Porsche Singapore have joined forces to offer a special afternoon tea experience in May and June. The “Teatime Dreams” event celebrates Mother’s Day and Father’s Day with a menu of sweet and savoury treats at the hotel’s Lobby Lounge. Highlights include the Beef Medley with beer-braised beef, Bavarian Bites with homemade cheese, and desserts shaped like the Porsche crest and Mandarin Oriental’s fan emblem.

Available daily from 1 May to 30 June from 1pm to 5pm, the tea costs $68 per person with coffee or tea.

On Mother’s Day (10-11 May) and Father’s Day (14-15 June) weekends, guests can upgrade to a $78 package that includes a 30-minute test drive in a Porsche electric vehicle. Mothers can test drive the Macan or Taycan models, while fathers can experience the 718 or 911 sports cars.

Teatime Dreams A Dine and Drive Experience

A Porsche Lifestyle pop-up shop will also be at The Mandarin Cake Shop throughout May and June, with afternoon tea guests receiving a 10% discount voucher.

Advance bookings are required, especially for the test drive experience.

A Taste of Paris in Singapore: Odette x National Gallery Special Dining Experience

National Gallery Singapore and three-Michelin-starred restaurant Odette have launched a new dining experience in time for the season. From now until 30 June 2025, diners can enjoy a special four-course lunch menu tied to the Gallery’s latest exhibition, City of Others: Asian Artists in Paris, 1920s–1940s.

The collaboration brings together art and cuisine. Odette, led by Chef Julien Royer, has created a modern French menu with Asian elements. Each set includes a starter, fish, main course and dessert, and costs $298++ per person. The meal also comes with a complimentary ticket to the exhibition.

Odette x National Gallery Special Dining Experience

City of Others, held at the Singtel Special Exhibition Gallery, showcases over 200 artworks and archival images. It tells the lesser-known stories of Asian artists in early 20th-century Paris and their role in shaping global art movements.

The lunch is available Tuesdays to Thursdays. Reservations can be made online.

Violet Oon Singapore has opened a new 6,000-square-foot restaurant in Dempsey. The standalone outlet features a main dining room, private dining spaces and an outdoor veranda that welcomes pets.

The refreshed menu showcases Singapore heritage dishes with a focus on rare Peranakan delicacies. Alongside classics like Buah Keluak Ayam and Babi Pong Tay, the restaurant offers hard-to-find heirloom dishes such as Nasi Ulam, a rice salad featuring eight different herbs.

A new beverage programme includes cocktails and spirit-free options that complement the food. Drinks like Rindu Roselle blend American bourbon with Sarawak roselle and red wine.

The restaurant’s design reflects Peranakan heritage with antique Nyonya tiles and Oon’s signature black, gold and emerald green palette. An edible garden grows native herbs and spices used in the cuisine.

InterContinental’s Lobby Lounge Launches Messy Munching Menu

The Lobby Lounge at InterContinental Singapore is set to introduce a limited-time “Messy Munching Menu” from 1 May to 30 June.

The new offering features five dishes designed to be eaten by hand. These include a Sloppy Seafood Avalanche with fresh seafood atop linguine pasta ($59), a Sinfully Crispy Chicken Stack with truffle bechamel ($52), and Gooey Overloaded Wagyu Beef Subs ($48).

For sharing, the menu offers Mess-terpiece Nachos topped with beef chili con carne and guacamole ($37). A dessert option, Chocolate Chaos Bombs, features choux puffs filled with Madagascar vanilla ice cream ($28).

Eden Restaurant at Pullman Singapore Orchard has launched new dining options for May. The glasshouse venue now offers a revamped à la carte menu featuring modern Asian cuisine under Executive Chef Elton Chong.

New signature dishes include Uni Citrus Linguine and Tajima Beef Wagyu Striploin with Soy Caramel Bordelaise. The restaurant also introduces weekday set lunches starting at $40++ for two courses and $48++ for three courses.

Grand Copthorne Waterfront Hotel Singapore will offer a Japanese-themed buffet at its Food Capital restaurant. The Sakura Serenity Buffet features dishes created by Chef Elson Lee, who trained under Michelin-starred Chef Santaro Lee. The menu includes sashimi platters, grilled unagi, beef curry, robatayaki skewers and tempura.

Guests can look forward to highlights such as the Flavours of Japan Sashimi Platter, caramelised Grilled Unagi, and Japanese Beef Curry. The Oden Station offers shrimp gyoza and mushrooms in dashi stock, while crispy options include Nobashi Prawn Tempura. A two-meter-long sushi belt provides additional choices.

The Live Station features daily Chef’s Choice selections alongside signature roasts including herb-crusted beef and slow-roasted lamb leg. Japanese desserts like Wagashi, Hojicha Crème Brûlée, and Black Sesame Ice Cream complete the meal. Traditional seafood-on-ice and international dishes are also available.

Prices start at $72++ per adult for lunch on weekdays and weekends. Dinner costs $102++ per adult from Sunday to Thursday, and $112++ on Friday and Saturday. Children aged 6-11 pay half price, while those under five eat free.

Italian restaurant Altro Zafferano has launched a refreshed dining experience at its Ocean Financial Centre location. The venue, which sits on the 43rd floor with panoramic city views, now focuses on social dining for everyday occasions.

Executive Chef Andrea De Paola and Head Chef Federico Schiraldi have created new menus featuring Southern Italian cuisine made lighter for contemporary tastes. The refreshed a la carte menu includes an expanded selection of starters from $18, specialty focaccinas from $10, and sharing plates from $36.

Weekday set lunches start at $58 for two courses and $68 for three courses.

The restaurant’s alfresco Terrace Lounge offers light snacks, spritzes, and cocktails, with the Aperitivo prices (applicable for 7 guests and below) for selected drinks all night from 5.30pm onwards.

The Masses, a Franco-Asian restaurant in Singapore, has introduced a new farm-style Sunday brunch. The brunch offers a 10-dish sharing menu for $68.80++ per person.

Chef Dylan Ong’s brunch menu features artisanal breads with house-made dips, salads, cold cuts and protein-focused mains. The experience includes second helpings of select dishes offered tableside.

Located at The Arcade @ The Capitol Kempinski, the brunch runs from 11am to 5pm with three seating times. Children under five eat free, while those aged six to ten pay $38++.

Diners can add freshly shucked oysters for $30++ (minimum six pieces) and opt for free-flow beverages: Prosecco ($48++) or Prosecco with wines on tap ($58++) for two hours.

The buffet features flame-grilled dishes from around the world, led by Chef de Cuisine Leon Yee. Weekend dinner guests can enjoy exclusive items like Hay-Smoked Grilled Wagyu Beef Belly and Slow Roasted Whole Veal Shank.

The menu spans global cuisines with highlights including Chongqing Mala Grilled Fish Collar, Indonesian Ayam Bakar, Thai street food classics, and Mediterranean dishes like Salt-Baked Whole Sustainable Seabass.

Prices range from $72++ for weekday lunch to $112++ for weekend dinner, with children aged 6-12 paying half price. Children under six dine free.

Mexican-themed restaurant group Chimichanga will stretch Cinco de Mayo celebrations into an eight-day festival from 3 to 10 May 2025. The lineup runs across its five venues and includes parties, drink specials, family activities, and a cocktail workshop.

The festival opens on 3 May with a party bus event in partnership with Singapore Pub Crawl. The night starts at Chimichanga Paya Lebar, stops at Chimi’s Somerset, and ends at Señor Taco in Clarke Quay. Tickets start at $35, including drinks and onboard bar service.

Also on 3 May, Chimichanga VivoCity will run a “Fiesta Siesta” with drink deals from 2 pm to 7 pm. Guests can choose two beverages for $22, from a range of house pours, Margaritas, or craft beers.

Families are welcome on 4 May at VivoCity, Paya Lebar and Holland Village. Activities include piñatas, maracas-making, and free goodie bags for kids.

From 5 to 9 May, Chimichanga hosts a five-day margarita promotion with Classic Lime Margaritas at $5.50 per glass. A cocktail workshop will close the festival on 10 May at VivoCity, led by guest bartender Domagoj Pribanic.

Hamamoto Launches New Spring Menu with Focus on Seasonality

Japanese fine-dining restaurant Hamamoto has introduced its new spring menu. The one-Michelin-starred restaurant, led by Chef Kazuhiro Hamamoto, continues to focus on seasonality and careful preparation.

The new menu begins with appetisers like tairagai (pen shell clam) and hotaru-ika (firefly squid), marinated in sake lees for several weeks. The squid is served with Hamamoto’s own sake, designed to complement its soft sweetness and umami. Another key dish this season is the Kegani (hairy crab) shabu shabu. The crab is from southern Hokkaido and is shelled by hand before being lightly cooked in a long-simmered dashi broth made from crab shells and miso.

The sushi course remains a centrepiece, with fresh seafood flown in from Japan. Each nigiri is served simply, allowing the fish to shine. Desserts include sakura mochi with sakura ice cream, shaved mango ice, and seasonal fruit with yuzu sorbet.

It serves only 10 guests per seating. Reservations are required.

Courtyard by Marriott Singapore Novena has launched a new menu at its rooftop venue, Las Palmas. The Palm Springs-inspired restaurant now offers dishes that blend Western flavours with Asian influences.

The updated menu features shareable items like Tikka Tacos with tandoori lamb at $20++ for three pieces, and the Meat Me & Taco platter at $50++, which serves two to three diners. Main courses include the Clock Out Cluck In ($25++), featuring cornflake-crusted chicken topped with salted egg chicken floss. For lighter options, the Prawn Cocktail Jar ($16++) offers a modern take on the classic dish.
