The opening of new restaurant Chip Bee Bistro at Chip Bee Gardens, Holland Village is possibly the most exciting f & b news in this area since the opening of the One Holland Village mall. Currently open for lunch only on Friday to Sunday, we picked a hot sunny day to dine at the new bistro by the founders of PS Cafe.

New Restaurant by the Founders of PS Cafe
According to a CNA interview with PS Cafe co-founder Peter Teo, he and his partners in 2022 sold their remaining stakes in PS Cafe which they had built over more than 25 years. They felt it was time to exit and let new blood into the business to take it to the next level. A few years later they apparently missed the f & b business and the founding members decided to get the band together. In July 2025, the new project shop was born at Chip Bee Garden.

The new bistro is situated on the quieter side of Holland Village, along Jalan Merah Saga. Here, there is a stretch of low buildings with mostly cafes and restaurants on the ground floor and residential units on the upper floors. Some of Chip Bee Bistro’s neighbours are famous cafes such as Tiong Bahru Bakery, Keong Saik Bakery and Baker and Cook.

The bistro is quite spacious and tastefully furnished. The aircon was cold and jazzy music was playing in the background. The room acoustics seem to have benefited from some sound treatment as the sound level was well controlled even when the place filled up (soon after these pictures of an empty bistro were taken). This is a pleasant place to hang out.
Chip Bee Bistro Menu
This is a picture of the Chip Bee brunch menu which is served in the day time. The choices were limited and so it was easy to come to a decision. We decided to try the battered crimson snapper ($32), chicken supreme cotoletta ($34) and a side of charred broccoli ($15).

Chip Bee Bistro Wine List
With the smooth jazzy music and classy bistro atmosphere, this is a good place to have a drink or two. But not on this visit. For future reference, here are pictures of a couple of pages from the wine list.

Lunch at Chip Bee Gardens
This was our meal at the new Chip Bee Bistro. We liked how the food was elegantly plated in a no frills way.

The battered crimson snapper was a type of fish and chips. It looked quite attractive but we thought the batter was rather thick and the fish was dry. Fortunately the fish’s side kicks – savoury peas and malted tartare sauce were on hand to improve the dish.

Our chicken supreme cotoletta was prepared similar to veal schnitzel. Mostly boneless (with only a drumstick being retained), the chicken was breaded and deep-fried. Our observations on the chicken were similar to those for the fish – dry but with nice condiments. In this case the lemon mustard sauce and the apple, fennel and cabbage slaw made the fried chicken less hard and dry.


The accompanying broccoli was probably the best dish of the day. Eating it felt healthy and the natural vegetative flavour was smothered by the toum sauce – a creamy Middle Eastern garlic sauce. Olive oil and almonds made the broccoli taste even better.
CBB Dessert Menu and Coffee
The dessert menu was tempting but we resisted. The portion size of the food was quite generous, leaving no room for the sweets. But there was room for coffee.

The cappuccino ($7) was ok but not memorable.
