August brings a fresh round of hotel dining promotions across the island. Several tie in with National Day. Others mark seasonal menu changes or new chef collaborations. Here is a round-up of where to eat well this August.

The Tropical Sunday Brunch returns to 15 Stamford this August, running every Sunday from 12.30pm to 3.30pm. The headline addition is “Market Fresh to Masterpiece,” a new station where diners choose their own seafood and have it grilled on the spot. Sauce options range from sambal to Thai-style hollandaise.

A new salt-aged meat cabinet joins the line-up too. Angus beef striploin and Wagyu rump cap are matured before carving. Beyond that, the spread covers oysters, Boston lobster, snow crab, sashimi, Jamรณn Ibรฉrico de Bellota and a Heritage Classics section with laksa, dim sum and roast meats.

Dessert includes an Ondeh Ondeh Cake and a Lychee Bandung Cake, alongside Nyonya kueh and chocolate-dipped madeleines.

Prices start at $138++ per adult and $69++ per child. Free-flow wine, beer and cocktails cost $178++. Those wanting Champagne can pay $198++ for Taittinger Brut Rรฉserve, or $218++ for Taittinger Prestige Rosรฉ.

J65, JEN Singapore Tanglin by Shangri-La

From 4 August to 2 September, J65 hosts guest chefs ร‡etin Afacan and ฤฐbrahim Durgun from Shangri-La Bosphorus in Istanbul. Together they prepare a dinner buffet built around Turkish and Ottoman cooking. The buffet runs daily except Thursdays, from 6pm to 9.30pm.

Dishes include Hรผnkar BeฤŸendi, a slow-braised lamb dish served over smoky eggplant purรฉe, and Chicken Mahmudiye, made with dried fruits and almonds. A show kitchen turns out Adana Kebab, Tokat Kebab, Chicken ลžiลŸ and Lamb Tandฤฑr throughout the evening.

For something lighter, there is Lebeniye Soup, a yoghurt-based soup with lamb meatballs, and a Traditional Lentil Soup. Dessert closes with Kรผnefe, a warm pastry with melted cheese and pistachios, and Baked Milk Helva.

Adults pay $98++ and children pay $49++, subject to service charge and tax.

Edge, Pan Pacific Singapore: Heritage of Penang

From 12 August to 20 September, Edge brings in four Penang hawker veterans for its “Heritage of Penang” dinner buffet. Chef Toon Chin Hye of Ah Soon Fried Oyster, Chef Tan Pow Lai of Tan Kee Poh Piah, Nyonya cuisine specialist Chef Tan Kim Chong and dessert maker Chef Kong Chee Thiam all join Executive Chef Andy Oh for the run.

Between them, the chefs prepare Fried Oyster Omelette, Nyonya Otah, Nyonya Curry Kapitan, hand-rolled Popiah and Apam Balik. Chef Andy adds his own Penang White Curry Noodle with Pork Blood Curd and a wok-fried Char Kway Teow.

The wider spread includes Nyonya Mango Kerabu, Loh Bak, Assam Pedas Fish and Penang Cendol, alongside Edge’s usual international offerings such as Osso Bucco, Seafood Bouillabaisse and Slow-roasted Prime Rib.

Dinner runs from 6pm to 10pm. Adults pay $118++, children $59++, both inclusive of free-flow soft drinks.

Peppermint’s new buffet, “Roast & Grill: The Smoke & Char Collection,” runs from 12 August to 31 October. Developed with students from ITE, the buffet centres on a Josper Grill and carving station using applewood, lychee wood and charcoal.

Highlights include an Argentinian Asado-style Grilled Black Angus Cรดte de Boeuf, available Thursday to Saturday evenings, and a 12-hour Applewood Smoked Wagyu Beef Oyster Blade. A claypot station serves Fish Maw in White Pepper Chicken Collagen Soup and Old-school Cantonese Seafood Congee, while wok stations turn out Wok-fried Crab and Tiger Prawns.

Sauces and salts made with herbs from the hotel’s rooftop Urban Farm round things off, including a Peppermint Chimichurri and a Cucumber Tzatziki.

Pricing varies by session. Weekday lunch costs $72++ for adults and $36++ for children. Friday and Saturday lunch rises to $82++ and $41++. Sunday to Wednesday dinner is $98++ and $49++, while Thursday to Saturday dinner costs $112++ and $56++. The buffet is halal-certified.

Where to eat this August -Brunch at LUCE

LUCE unveils a refreshed Italian buffet from 11 August, led by Chef de Cuisine Giuseppe Di Gaetano. Seafood on ice, artisanal cheeses and cured meats join live stations for squid ink tagliolini and hand-tossed pinsa, plus desserts finished tableside.

Before that, from 1 to 10 August, LUCE runs a separate SG61 Buffet marking Singapore’s National Day. Local flavours meet Italian technique in dishes such as Spicy Sambal Sotong and Smoked Caviar Pizza, Kaya and Duck Foie Gras Pizza, and a Chilli Crab Risotto finished tableside in a Parmesan wheel. A Kampong Chicken Rice station also features.

Where to eat this August -  SG61 Buffet  at LUCE

On 9 August itself, National Day, LUCE serves 61 handcrafted cakes across lunch and dinner, including an Orh Nee Custard Cake and a Milo Tiramisu Cake.

Regular lunch (Monday to Saturday) costs from $63++ for adults, rising to $73++ on Saturdays. Regular dinner starts at $85++ on weekdays and climbs to $98++ on Fridays and Saturdays. The National Day dinner on 9 August is priced at $88++ per adult. Children aged six to eleven pay roughly half these rates throughout, and diners get 30 percent off buffet prices on weekdays, or 20 percent on weekends.

Fullerton Treasure Of The Sea Buffet

Town Restaurant launches its “Treasures of the Sea” dinner buffet from 11 August to 7 November. The spread opens with Seafood on Ice, featuring Boston lobster, snow crab legs, half-shell scallops and sea prawns, served with a range of house-made sauces.

Hot dishes will include Sweet Chilli Garlic Butter Snow Crab, Lemak Jumbo Clams, Ginger Scallion King Prawns and Mala Seafood. A DIY Noodle Station lets diners build their own bowl, and a Good Chance Popiah Station offers freshly assembled popiah with traditional fillings.

Dessert comes with a Chocolate Fountain and an Ice Cream Corner, alongside a rotation of handcrafted sweets.

On Friday and Saturday evenings, the buffet extends outdoors with an Alfresco Charcoal Barbecue. Chefs grill Half-shell Scallops with Yuzu Mentaiko Bรฉarnaise, smoky Ikan Pari, BBQ Prawn Skewers, satay and Peruvian Spice Roasted Beef over charcoal embers.

The buffet runs Tuesday to Saturday, from 6.30pm to 10pm. Tuesday to Thursday costs $98++ per adult and $49++ per child. Friday and Saturday, which include the charcoal barbecue, cost $118++ per adult and $59++ per child. Children below six dine free.

Ginger.Lily’s afternoon tea gets a Szechwan twist from 3 August to 3 November, in a first-time collaboration with MICHELIN-starred Shisen Hanten by Chen Kentaro. Executive Sous Chef Cindy Khoo and Chef Chen Kentaro built the menu together, titled “A Seasonal Chapter of Unexpected Pairings.”

Savoury bites include a Duo of Duck Sablรฉ pairing foie gras with Zhangcha duck, a Shrimp & Shishito Roll, and a Black Vinegar Chicken Roulade. An Eight Treasure Glutinous Rice Wrap and a Truffle Mushroom Pavรฉ round out the course.

On the sweet side, expect a Matcha Ichigo Daifuku, a Pecan “Ma Lai Gao” and a Szechwan Konnyaku jelly finished with Okinawan brown sugar. Chef Cindy’s own Botanique en Fleurs 68% Chocolate Tart uses a bespoke blend developed with Cacao Barry.

Tea is served Monday to Friday from noon to 7pm, and weekends from 11.30am, with last seating at 5.30pm. It costs $68++ per person, minimum two persons, with free-flow coffee and tea included. A Champagne pairing with Moรซt & Chandon Impรฉrial Brut costs $15++ a glass.

Grand Copthorne Waterfront Hotel: Seafood Mania Buffet and Oceanic Treasures Afternoon Tea

GCW Seafood Mania Buffet

Food Capital at Grand Copthorne Waterfront runs its Seafood Mania Buffet from 11 August to 4 October. The seafood-on-ice line-up includes chilled tiger prawns, New Zealand mussels, scallops with roe and Spanish black mussels, alongside oysters, snow crab legs and baby lobsters at dinner.

Cooked dishes rotate through Singapore Chilli Crab, Black Pepper Slipper Lobster, Lobster Thermidor and Seafood Paella. Live stations add the hotel’s own signature laksa, Thai Boat Noodles and Seafood Pasta.

From Sunday to Thursday, diners get one lobster for every two adults, served with a grilled Surf & Turf dinner. On Fridays and Saturdays, the choice switches to one lobster or one crab per two adults instead.

Lunch costs $72++ for adults and $36++ for children, Monday to Saturday. Dinner is $106++ and $53++ from Sunday to Thursday, rising to $116++ and $58++ on Fridays and Saturdays.
